Don't laugh, but it's salmon loaf. Mom was a good 1950's - 1960's cook. Whenever my birthday rolled around she'd ask me what I wanted for birthday dinner. I always said salmon loaf. The sad part is she passed away before I got her recipe, and nothing I've tried has even come close.

God, too many to mention, my mother is a fabulous cook! I think I would have to say the 'sweets' she made at christmas time, like coconut ice. My boyfriend was particularly impressed with this as he had always thought of this as a west indian food (he is of jamaican decent!) Good old mum!
