As far as I know the chef prepared strawberry meringues with whipped cream --- then he dropped it. He didn't have anything else so he scooped it up and renamed it Eton Mess.

Recipe - broken meringues, strawberries and whipped cream.

Some say it comes from Eton School but I believe it was invented by a military chef when Eaton Hall, the seat of the Duke of Westminster was used as an officers mess in WW2

Does it not come from Eton school? Strawberries and meringue all mixed up together with some cream., lovely.
