Mom use to make rice for breakfast. We ate it with sugar and milk. Then whatever was left she made rice pudding with. Mix 4 eggs, a cup of sugar, 2 teaspoons vanilla and about 1 1/2 cups milk with the rice. Add some rasins and bake like custard.

U can make yummy pan cake with the left over rice.
Its a Indian dish very tasty handy and yummy.
2 cups of cooked rice.
3/4 cup yoghurt's or sour curds,
1 cup chick pea flour
a pinch of turmeric powder
red chili powder and salt to taste
2 spoons of oil
and few spoons of oil to sprinkle on the griddle.
Method- Mix rice and sour curds together and keep it to rest for at least 3-4 hours. Before making mix all the ingredients and make it into a thick paste.
heat a flat bottom pan or a griddle, sprinkle few drops of oil. then take a spoonful of the mix and pat it on the griddle sprinkle some oil around it, let it roast for few minutes on medium flame, then turn it around and let roast the same way. Serve hot with ketchup.

My mom always made this when i was a kid bake the chicken in a baking dish with garlic powder, onion poweder, salt, pepper, paprkia (works best with chicken breast on the bone with skin) when done baking remove chicken from the pan and add the white rice to the baking dish mix is all around picking up the bits at the bottom, give it a shot of soy sauce throw it back in the oven to heat the rice through done

Mix rice with cheese then throw in some onions and green pepper slices, margarine and dice up some meat and nuke it all in the microwave. It beats Hamburger helper buy far.

Make a stir fry with some diced up beef or chicken or pork, adding any your favorite veggies, add in some stir fry sauce and you can add the rice right to the skillet or heat it in the microwave and serve the meat and veggies stir fry over it.

If the rice is cooked, dont eat it after 24 hours it WILL contain weevils, the will give you 'Delhi Belly', not good. Why not look up a good risotto recipie, or stir fry it with chicken, peppers, beansprouts and vegetables, mixed in with a hoi san sauce (you can buy this ready made in any good grocery store) and it makes a very light but very good 'comfort food'........enjoy!

Perfect for a salad:
2 cups cooked white rice
1 can black beans
1 can corn
1 cup salsa
1/2 cup mayo
1/4 cup cilantro, chopped
1/4 cup mayo
mix all together and refrigerate
