I just had an egg white omelette with green peppers, roasted turkey, and spinach, topped with tomatoes & hot sauce!!! (Got 3 servings of veggies in 1 meal) Actually, I scramble mine together so that I get ingredients & flavor throughout. When you fold an omelette you tend to have a portion of the eggs without ingredients.

I use a wire whisk and add a little bit of milk, salt and pepper and nutmeg if you like. In a seperate pan I saute onions, green peppers, red peppers and mushrooms. Salt and pepper them too. When the veggies are beginning to get tender I start the eggs. You can either make a traditional omelet or scramble them together. I add either american cheese or grated cheddar. You can also add ham or sausage, or whatever else you happen to like.

Omelette's are good. But I prefer to watch some one else make them, then doing it myself. Go to the nearest El Torito and watch how those guys make em. They are skill in the arts. They will make them any way you want in 2 min. or less. It's really neat to watch!

Eggs, a little milk, herbs, and seasoning make a fine plain omelette but be sure to use duck eggs.

I'm a simple man with simple tastes, and would go the route of French Toast, or "eggy bread" as we like to call it in parts of the UK.

Egg, milk and black pepper mix, dip and soak the bread in it, the fry, bit of unhealthy salt....yummy!
