i made bbq pork for sandwiches in the crock pot.. want any ideas for a side dish... thanks:) most creative gets best answer..

i love mac salad and potato salad but my boyfriend wont eat it:( bake potatoes sound good and sweet potato fries sound awesome!!

someone asked for recipe for the bbq pork sandwiches. all i did was put a pork roast in the crock pot with two bottles of bbq sauce. i used open pit, but you can use whatever u like. i left it in the crock pot for two days on low and drained the sauce and added another bottle to make the mix a little saucy. its really easy and good.

macaroni& tuna salad, baked beans with brown sugar
if you make this, put some of your beans on top of your salad. It may sound gross, but there is not 1 person i know who has tried it didn't love it.
boil macaroni, drain, add chopped onions(optional), a couple cans of reg. tuna(drained) and mayonaise.
open can of beans, squirt in ketchup, mustard, coffee(optional.. only 1/8 cup or so) and brown sugar 1/4 cup, heat
real good promise:)

When I do pulled pork we usually have homeade apple sauce but that's a little time consuming for some looking for a quick side dish. You can make a quick version though using canned sliced apples a can of chunky applesauce and about a half cup of brown sugar and a good shake of cinnamon. Very good either cold or heated with the pork sandwich.

Escalloped corn is always a good side dish as well with it. Here is a quickie version of the recipe that is really good.

Creamed Corn (or Scalloped Corn)
CREAMED CORN
2 cans whole kernel corn, drained (or 4 cups of frozen thawed corn)
2 cans creamed corn
1 stick (1/2 cup)butter
2 packages Ritz crackers, squeezed to crush lightly
Put corn into 9 x 13-inch pan. Sprinkle crackers over the top.
Dot butter over crackers. Bake in 350 degree F oven till crackers are golden, and no butter is visible (about 30 minutes).

When I make Pork BBQ... I like German Potato Salad or French Fries, depending on my mood. But sense you want creative here is my recipe for German Potato Salad. Mmmm... Delicious...

German Potato Salad

8-10 large Red Potatoes
1 lb Bacon
1 Red onion, finely chopped
1 cup chicken broth
1 cup white vinegar
Celery Seed Salt and Pepper to taste

Cut Potatoes in Cubes, Boil potatoes; don't overcook. Cook bacon until crispy, remove from pan with slotted spoon; drain on paper towels, set aside. Reserve drippings. When potatoes are cool, put into a large bowl. Crumble bacon. Add chopped onion and bacon to potatoes. Heat broth in bacon grease with white vinegar; add to potatoes and add celery seeds, salt and pepper. Stir all together carefully so you don't to mush the potatoes. BEST when HOT but... Can be served hot or cold.

How about a nice cool non-mayo pasta salad? Boil up a pound of tri-color rotini, dump in a bottle of Italian dressing, add chopped veggies like tomatoes, cucumber, green onions, and black olives, whatever you have on hand or sounds good. Top with feta crumbles.

Cole slaw and baked potatoes sound good to me. You could top the potatoes anyway you like or just butter and sour cream.

creamy cole slaw. it may not be the most creative but they compliment each other well. or maybe some sweet potato fries
