I've actually seen a huge solitaire "disappear" by two diamond bands on either side.
I'd go for one band for now, and eventually get the second one if you still want it later on.

My engagement was a carat rectangle, and my band is full circle channel diamonds. I think it looks really good together. So I would encourage you to get just the one channel band for now. (maybe full circle so you dont have to care about it spinning round your finger?) In the future, you can always add another ring if you want to change the look.

How much rock you want on your finger is an entirely personal decision.
Usually though you don't buy two bands. You buy one band then after you have earned a second one (say on your 5th anniversary) your husband can buy you another anniversary band.
If you want to go super traditionally technical you shouldn't even be getting diamonds in your band. You buy a plain gold one. After one year you exhange that one for a band with channel set diamonds (hence why they are called anniversary bands). Then in a few years your hubby may buy you a second anniverary band. A few years after that you upgrade the quality or the size of your solitare.

I agree- get one band for now, and then you can get another at a milestone- your tenth anniversary, for instance. That's exactly what one of my friends did- and your ring sounds very similar to hers.
