INGREDIENTS:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

Ingredients
200g plain flour
2 egg
500 ml of milk
2 tsp sugar
Add all the ingredients into bowl. Add the dry ones first. It helps to sieve the flour. Mix well.
Heat frying pan until a drop of water 'dances' when dropped in the pan.
Add a tiny bit of butter or oil to pan.
Pour in enough mix to cover the base of the pan thinly.
Cook for two minutes until the pancake is golden. You should see bubbles form and then pop around the edges.
Flip the pancake over.
Cook the other side until golden
Remove when both sides are golden and serve
tips:
Top with honey, orange juice, cinamon powder, golden syrup, sugar or whatever else you would like.
If you really have a sweet tooth, add a little vanilla essence to the mix or a little bit of curry.
Lemon juice & fine sugar make a very traditional and delicious topping.
Don't be surprised if the first pancake is a flop. It is often the pancake that seasons the pan for the remaining successful ones to come.
You can also put strawberries on it.

PANCAKES
2 eggs
2 cups all-purpose flour

1/4 cup vegetable oil
2 tablespoons melted butter
3 tablespoons sugar
1 1/2 tablespoons baking powder
1 teaspoon salt
Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth. Grease a heated griddle.
Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.
Cook pancakes until puffed and dry around edges (tiny bubbles will begin to form).
Turn and cook other sides until golden brown. Flipping once should be enough. The first pancake isn't always the best one.
Note: Buttermilk, yogurt, or sour cream may be substituted for some or all of the milk.
This may cause the batter to be too thick or too thin; adjust accordingly by adding milk to thin or flour to thicken. When you use a sour ingredient, cut the baking powder by 1/2 tablespoon and add 1/2 teaspoon baking soda. If you don't have buttermilk, you can add powdered buttermilk to the milk.

Directions

Simple Pancakes
(4 servings) Printable Version
2 cups of flour
pinch of salt
2 large eggs
milk
Mix all of the ingredients throughly so no lumps in the mixture. The more milk you use, the thinner the pan cakes. Cook on a greased griddle or fry pan until batter starts to bubble and down-side is golden brown. Flip and cook for about 2 more minutes.

BUTTERMILK PANCAKES
1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, slightly beaten
11/2 cups buttermilk or sour milk*
1 tablespoon pure vanilla extract
3 tablespoons cooking oil
Desired fruit (Optional)**
Desired syrup (Optional)
*Sour milk - For each cup of sour milk, place 1 tablespoon lemon juice or vinegar in a glass measuring cup and add enough milk to make 1 cup - stir and let stand 5 minutes.
In a large bowl stir together flour, sugar, baking powder, baking soda and salt. In another bowl use a fork to combine egg, buttermilk, vanilla and oil. Add egg mixture to flour mixture all at once stirring until just moistened (batter should be slightly lumpy. If adding fruit, mix in at this point.
Pour by 1/4 cupfuls onto a hot heavy skillet or hot griddle and cook over medium heat for 1 to 2 minutes on each side until golden brown, turning to the second side when pancakes have bubbly surfaces and the edges are slightly dry. Serve warn and, if desired, with syrup.
PANCAKES
Prepare as above except use milk instead of buttermilk, increase baking powder to 1 tablespoon and omit baking soda.
**FRUIT OPTIONS
If desired, stir into the pancake batter one of the following: 1/2 cup chopped fresh apples, apricot, peach, nectarine, banana or pear; 1/2 cup fresh or frozen blueberries or other berries or mixed fruit; 1/4 cup chopped dried apple, apricot, peach, pear, raisins, currents, banana, dates, cranberries, blueberries, cherries or mixed fruit.

i pinch of salt.
Mix together, till well blended. Heat a frying pan with a little oil, pour in a ladle full and cook until the pancake is dry on top. Flip.

sift before measuring

resift with

1/2 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
beat until light: 1 egg
add:
1 cup buttermilk (milk with lemon juice)
1-2 tablespoons of melted butter
combine the sifted and the liquid ingredients together, oil a pan, and fry and flip! (May want to make double batch)
