I have tried ones that turned out to not be ripe enough. They have not turned a lot of their starch into sugar and lack that great juicy sweet taste of fresh pineapple. However they are not poisonous, just disappointing in their taste. They are no more harmful than under-ripe apples, pears, plums, or papaya.

Over-ripe, on the other hand, is bad news. If you kept a pineapple too long and it now smells like beer that is not good. You are eating fermented fruit which could either be alcoholic or moldy.

No, it is a mild poison and will cause problems you don't want to deal with, including serious throat irritation and a bad case of diarrhea.
