I never made mead, but, would like to try one day.
I going to tell you how I make easy Peach Wine in summer.
I use a 5 gallon water bottle like offices use.
5 pounds sugar
5 pounds can of peaches
Fill with water about an inch below the top widest part not the very top.
Pinch of Active Yeast. (Many say Brewer's Yeast). It may be better but I make a lot of bread and just just that yeast.
For fun I cap it with a Rubber Surgical Glove (Use a rubber band if you need) for expansion and to keep ants. Set under a tree (In the shade, side of building) where it not get direct sun.
Some friends use more Yeast, but, it really not take much. I know people that not use any Yeast. It takes longer, but, it better.
You will see it start working (Bubbling) in a few days and you balloon, glove etc. will begin to inflate. Now and then you deflate so it not blow off.
In about 1 month you may want to taste. At this time it not as much alcohol and sweet. 2 months usually getting pretty good. 3 months is strongest and not sweet. Be more like Store bought.
If, it stop working (Bubbling at anytime between 1-3 months it ready). Get another 5 gallon bottle and not shake your wine siphon off the liquid and leave the settlings. You can can out the old bottle. After the siphon bottle settle then I siphon back into the other bottle through a sediment filter (For fun we use Panty Hose, some use cheese cloth). Then this we drink or bottle.
Any friut work, we have used Raisin and Fruit Cocktail, but the peach always good and we take off when it still a little sweet as the women like it better.

well well this is my type of question. iv tried a few brands. yes you need honey, water, and yeast. have you tried looking at your local beverage store?
heres some brands; honey wine, redstone, chaucer, Ragnar's Reserve(this is a bit hoppy)
my second brew is mead first will be hard cider(possibly a cider-mango)

Try a microbrewery. I sometimes eat lunch at a local microbrew that makes mead.
