A few of them out there and I use a lot of them, but I'd say the Palomar be ONE of the easiest ;)...

THE EASIEST IS THE ONE YOU LEARN TO USE BEST
I use several, but the one I use the most I can do in the dark by feel alone:
Thread the line through the hook (lure eye or swivel) pull about 8-10 inches of line
loop it back leaving about 5-6 inches of tag line
put the tag end though the loop 5-6 times
pull the tag end, tighening the knot, then pull the hook and slide your knot down to the eye
trim off excess tag end

If fly fishing then use the appropriate knot for the part of the line you are tying no knot is a be all, end all!

An albright knot. Easy to tie and strong as heck.

Like fishsteel said....Palomar knot hands down for tyeing anything straight to your line...hook, crankbaits, spinnerbaits, jigs, etc.
Also this knot does not affect line strength.

lets see if i can explain it . run the line threw the eye of the hook,pull line back along side the line,twist the hook 6 complete circles,then run the end of the line threw the opening just above the hook.then pull tight.hope you can understand this.

i like the blood knot or maybe the grinner knot or sometimes the clinch knot
