There is no sacrifice in your example, but only an exchange. Your sacrifice would be to eat neither animal because you respect the animal and the god who made us all, human and animal.
A sacrifice it to relinquish something you cherish very, very dearly and you may never have again. Is it proper to ask any god to exchange something for another thing if he has provided what he/she has given you? That might mean you aren't content with what you are allowed to have...
Even though it was only and example, the chicken was something small in exchange for something bigger and more valuable. Perhaps god allowed the chickens because he/she knew that you wouldn't have the means to care for a bigger animal, only what you could afford.
