Whenever I eat baked potatoes, sometime afterwards I get sharp, stabbing twinges of hunger (except it feels weirder than that), and I start to feel lightheaded and shakey and ill and weak, and sometimes I tremble slightly and feel kind of like I might pass out. If I then eat something heavy and nonstarchy, like baked beans, it goes away. Mashed or fried potatoes sometimes make me feel a little bit like this, but just a little bit.

What's wrong with me?

By the way, I also can't be filled up by anything with a lot of carbohydrates, like pasta or bread or whatever.

I always find that no matter how much I eat for dinner, at the end of the day I feel hungry and its not sated unless I eat a can of beans, unless dinner had lots of beans. Yes, my roommates have complained. I have no idea why this is.

This sounds suspiciously like diabetes. Simple carbs (like white bread, regular pasta, candy, potatoes, high fructose corn syrup, etc.) drive your blood sugar higher and can give you a feeling of hunger (and more.)

The beans are complex carbs and are much slower to hit your blood sugar.

It's very important you talk to your doctor right away so you can be tested.

I am not a doctor, so consulting one is important. I can only guess, the doctor can test. Best of luck to you.
