No they are not the same thing. You have to use the ingredient specified in the recipe.

No, they are not the same thing.

Baking soda (sodium bicarbonate) can only leven during baking if sufficient acid is present. Therefore, baking soda is usually used if acid ingredients are also used, such as lemon juice, yogurt, cream of tarter, etc.

Baking powder is essentially sodium bicarbonate, with a powdered acid and a starch to keep it all dry. This is so you won't have to add an acid ingredient to get your product to rise.

So why not use only baking powder? Easy. It doesn't last very long!

It IS possible to substitute baking soda for baking powder, but I wouldn't suggest it. It would take lots of (professional) baking prowess to know how much acid to add to produce the product you want.

No they are not. Baking soda is basic and will yield a bitter taste unless countered by the acidity of another ingredient, such as buttermilk. You'll find baking soda in cookie recipes. Baking powder contains both an acid and a base and has an overall neutral effect in terms of taste. Recipes that call for baking powder often call for other neutral-tasting ingredients, such as milk. Baking powder is a common ingredient in cakes and biscuits.

So you would use baking powder for cupcakes.

You can NOT substitute anything for baking soda. But, if you have baking soda and need baking powder, you CAN use one of the following to replace 1 teaspoon of baking POWDER...

1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar
OR 1/4 teaspoon baking soda plus 1/2 cup buttermilk (decrease liquid in recipe by 1/2 cup)
