I don't want to use "lard" or shortening, and I want to use self rising flour. Any recipes???

You are so right Dottie! I did my own searching before I used 5 points for this! I didn't see his tho, I made peanut butter cookies instead :( 2nd batch in the oven now! I read the answers and I was like WTH?? I don't think they read that part, or over looked it or something. They just saw SUGAR COOKIES and went on that lol

Deluxe Sugar Cookies

1 cup butter or margarine, softened
1 1/2 cups confectioners' sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups self-rising flour
granulated sugar

Mix thoroughly butter, confectioners' sugar, egg, vanilla and almond. Blend in flour. Cover and chill 2-3 hours.

Heat oven to 375. Divide dough in half. Roll each half 3/16 inch thick on lightly floured board. Cut into desired shapes; sprinkle with granulated sugar. Place on lightly greased baking sheet. Bake 7-8 minutes or until light brown on edge.

I'm sorry I don't have an answer for you, but did you notice that 2bzy was the only that actually answered your question!?! The others either offered to let you do your own search (which isn't what you asked for) or a recipe not using self-rising flour. Since my recipe uses all-purpose flour, I didn't offer it. 2bzy's recipe looks like a good one and is very similar to mine accounting for the difference between AP and SR flours.

This is an old recipie that my ex husband's grandmother made and is still my absolute favorite sugar cookie! None other compares to these!

1 1/2 cups butter
1 1/2 cups sugar
1 cup sour cream
6 egg yolks
6 cups flour
1 tsp. vanilla (optional)
1 1/2 tsp. soda
1 tsp. salt.

cream together the softened butter and sugar. Add sour cream and egg. mix flour, salt and soda together and combine. Chill the dough, Roll out and cut out sugar cookies. top with sprinkled sugar and bake at 350 degrees until set or lightly browned on the bottom.

The World's Best Sugar Cookie
1 cup vegetable oil
1 cup softened butter
1 cup powdered sugar
1 cup sugar
2 large eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
sugar, for coating cookies

Preheat oven to 375°F.
Beat oil and butter until blended.
Add powdered sugar and 1 cup sugar; beat well.
Beat in eggs and vanilla.
Sift flour, soda, cream of tartar and salt together.
Stir into sugar mixture.
Mix well.
Chill at least 2 hours.
Roll into 1-inch balls; roll balls in sugar.
Place cookies on ungreased cookie sheet and flatten with bottom of glass dipped in sugar.
The cookies should be flattened to 2-inch rounds; don't flatten too thin.
Bake for 10-14 minutes or until brown around the edges.

Sugar Cookies

4 ounces cream cheese, soft - 3.2*C - 6.3*P
2 tablespoons butter (1.4 stick), soft - 0*C - 0*P
4 egg yokes 1.2*C - 11.2*P
12 packets Splenda sugar substitute - 12.0*C - 0*P
2 teaspoons vanilla extract - 1.0*C - 0*P
2 teaspoons grated lemon peel (or lemon extract) - 0.2*C - 0*P
1/4 cup unbleached, all-purpose wheat (white) flour - 23.0*C - 3.0*P
1/4 cup vital wheat gluten flour - 5.8*C - 26.0*P
1 teaspoon baking powder - 1.2*C - 0*P
trace of salt (shake or two) - 0*C - 0*P
1 1/2 cups blanched almond flour - 18.0*C - 36.0*P

Directions:

Total 65.6*C (Carbs) - 82.5*P (Protein)

Combine cream cheese, butter and 2 egg yolks in the bowl of an electric mixer with a flat beater. Beat until thick, smooth and creamy. Do not under beat. Add the other 2 egg yolks and beat for another minute. Stop the mixer. Add the remaining ingredients, then mix at slow speed or by hand. Refrigerate the dough for about 30 minutes or until it can be handled without sticking.

Form balls the size of small grapes and put them on the cookie sheets. Allow room for expansion. About 24 cookies fit on a 13-by-18-inch cookie sheet. Flatten each cookie slightly with your fingertips. Next, rub a pinch of soy protein powder or soy flour on the contact surface of a smooth lid from a screw-top jar or a small flat-bottom glass. Press down firmly on each cookie. The cookies should expand to 2 or 21/2 inches. With a pastry brush, remove remnants of soy that may cling to the cookies.

Bake cookies for 8 to 10 minutes (check early). Cookies should be barely golden with a slightly darker edge.

Preparation Time: 50 minutes. Baking Time: 8 to 10 minutes.

Serving Size: Makes 95 to 100 Servings

Nutritional Information: Serving Size: 1 cookie-0.7 grams of carb, 0.9 grams of protein.
