CHICKEN PICCATA
2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Caramel Apple Puppets recipe
This is a great project for kids. Once an adult has coated the apples, children can create faces.
1 (14 ounce) package (about 40-42) caramels, unwrapped
4-5 small apples
4-5 flat 4-inch wooden sticks
2 tablespoons water
Styrofoam cups
To decorate:
Granola
Chopped or whole nuts
Chocolate chips
M&M's
Shoestring licorice
Lifesavers
Marshmallows
Put each decoration in a separate bowl or plate. Insert sticks into the bottom of the apples and set aside.
Place caramels and water in a large, glass measuring cup and microwave on HIGH for 2 minutes. Stir with a rubber spatula. Heat for another 30 to 90 seconds, until melted. Stir until smooth.
Dip apples into the caramel. Use a rubber spatula to coat completely. While the caramel is still warm, dip the top of the apple in nuts, granola, etc., if desired. Turn Styrofoam cups upside down and push the wooden sticks through the bottom. Now you have both hands free to create your masterpiece! Make wacky faces using any and all available candies and whatnot.
Place the finished product on a cookie sheet lined with wax paper. Freeze for 15 minutes. Serve immediately or refrigerate.

Together gather clean and slice potatoes, carrots, onion broccoli(leave whole) and a nice cut of beef.....get out the aluminum foil,a sheet for each.
place on the foil what you want for your meal. Bring up the foil and fold to make a pouch...light the grill and place your pouches. when done this makes a wonderful dish is easy and with little clean up and allows kids to be creative.
My (now 28 year old) loved this when she was six.
for pointers see the link. I never had a link but some good meals made by my girl who was very proud when I said YUMMY!

Kids usually like fairly simple meals
A real pleaser is a meal with foods that they can pick up with a toothpick
Another idea would be to get them involved in the preparation of the food
They really love colorful foods
Try :
carrots
peas
beets
olives
raisins
turkey roll ups
tater tots
AND
What kid doesn't love macaroni and cheese

If you want to eat truly healthy, lose body fat consistently, normalize your blood pressure, cholesterol levels, prevent cancer, and even boost your brain health and energy levels, you may have heard all over the news that the Paleo Diet has been found to be one of the best methods of achieving all of these benefits compared to any other popular "fad" diets out there. Go here https://bitly.im/aNGXZ
The truth is that the Paleo Diet will never be considered a fad because it's just simply the way that humans evolved to eat over approximately 2 million years. And eating in a similar fashion to our ancestors has been proven time and time again to offer amazing health benefits, including prevention of most diseases of civilization such as cancer, heart disease, alzheimers, and other chronic conditions that are mostly caused by poor diet and lifestyle. One of the biggest misunderstandings about the Paleo Diet is that it's a meat-eating diet, or a super low-carb diet. This is not true

Cook off bacon cut into bite size pieces.
Fry pan onions.
warm through tin of baked beanz.
Mash a pan of potatoes.
In an open oven proof dish add ingredients in layers:
The bacon

then the onions plop mash on top - sprinkle cheese bake.
Medium middle oven

most kids like cheese, so make some potato skins, put the broccoli in the middle, and top with pizza cheese. have with mini burgers or make chicken strips fron cutlets. Kids like to play with there food so put some BBq sauce on the side so they could dip and play while they eat.

try grilled cheese with tomato soup. You can slice the sandwich in quarters and dip it in the soup. Most kids like things that involve dipping.
