It digests food faster, so it realeases CO2 faster, which makes the dough rise faster. Definitely the WTG if you are baking bread.... unless you use instant yeast! (usually at Sam's or Costco) You mix it in, let it rest for 5 min, then shape into your pans! Even faster!

It's better and more 'forgiving' if you don't get the temperature of warm water exactly between 110º = 120º. It has a longer shelf life too!
