You can make a double batch of hollandaise. For 1 batch it's 3 eggs yolks, 1 Tbsp fresh lemon juice, and 8 Tbsp cold unsalted butter. Just double that.

Make a lot of bearnaise sauce. You will also need about 3 shallots, 3 spoonfuls of vinegar, a lot of tarragon, some black pepper and a packet of butter, plus many steaks to serve it with, but it's an option.
