In addition to green beans, corn, and salad, we eat the following on a regular basis:
sliced tomatoes (in season) and grape tomatoes
candied baby carrots (cooked, then add butter, brown sugar and a little salt)
broccoli or cauliflower with cheese
zucchini (steamed with melted Mozzarella or stir-fried with onions)
cucumbers (sliced thin and mixed with onion and a little sour cream)
I also love homemade salsa, black bean salsa, and guacamole!

My mother grew fresh: green peppers, tomatoes, zucchini, cucumbers, peppers, egg plant, okra, there's nothing like fresh picked veggies. She did all this in our back yard.
