Best Chili in Texas
3 pounds cubed beef
2 tablespoons paprika
1 tablespoon onion powder
1 1/2 teaspoons cayenne pepper
2 teaspoons boullion, Beef granules
1 teaspoon boullion, Chicken granules
1 8 oz. can tomato sauce
4 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1 1/2 teaspoons MSG
6 tablespoons chili powder
1 split jalapeno chili pepper (leave this off if you don't want it
so hot)
Briefly sear meat and then add chili pepper tied in cheese cloth sack, paprika, onion powder, cayanne pepper, boullion granules, tomato sauce and water to cover. Simmer, covered, for 1-1/2 hours or so. Add cumin, garlic powder,
MSG, black pepper, and chili powder. Cook for another 30 minutes or until meat is tender. Remove cheese cloth sack with jalapeno pepper and serve.
Beans, ( I have found pintos to be best) prepared and served on the side to be added after serving. Same with cheese, onions, or what have you.
Makes 6 servings

I've heard a lot of people say that "real" chili doesn't have tomatoes -- but I love the juiciness that tomatoes give.
Does your dad have a recipe? How about your grandmother (dad's mom)? That would be the absolute best.
Otherwise, try this:
Cut up half an onion, chop it up fine, and fry it in a little oil in the bottom of your chili pot. Add the beef (cut up steak or hamburger), add a little salt and pepper, and fry until done. Add a can of beans, some salt and pepper to taste, and some chili powder. (I would use a teaspoon of cumin and a sliced up jalapeno for this.) Simmer for about half an hour, adding water if you need to. Serve with tortillas and cheese, or however you like it normally.
Good luck! It's hard to mess up chili -- call it beans and beef, if it doesn't seem like chili, and it should be edible still!

Homemade chili is going to take a little longer to make, unless you use canned beans. I don't recommend that.
Use pinto beans. If you buy the uncooked ones, there are several methods listed on the bag to cook the beans. I usually boil them for a little while, then let them soak overnight, then simmer them for an entire day (it takes a long time for me to cook beans and that may be attributed to my living in a hard water area).
Once the beans are cooked thoroughly, I brown the ground beef. Drain off any fats or oils when the meat is completely cooked. Spice the meat with garlic powder (not salt), minced onions, pepper (I use white pepper), cumin and some crushed red peppers (use sparingly unless you like the chili really hot).
After the seasonings have been stirred up with the meat, add the meat to the pot of beans. Make sure there is still water in with the beans! Add two cans of red enchilada sauce (mild, medium or hot depending on personal taste). Allow the chili to simmer UNCOVERED until thick, which sometimes takes a few hours. Stir frequently so the beans don't burn on the bottom of the pot.
Chili is great topped with cheese and some cornbread.

I once made some pork chops when a kid... I used way too much salt... as he ate them my dad said..." nice and salty .. just the way I like them." I might add he never salts any thing.

Take a pound of ground beef (or ground turkey, whatever) and brown it in a big pot in about 2 T olive oil, a chopped up small onion, a bit of garlic and pepper.
When it is cooked, add a large can of kidney beans and a can of black beans (or just kidney, if you don't want the black), a large can of tomato soup and chili seasoning (you can buy it in a packet). If you want to add some diced tomatoes or celery, do it now.
Let it simmer until the beans are tender. you can add seasonings if you need them

No Tomato Chili
INGREDIENTS
2 1/2 pounds lean ground beef
salt to taste
1 medium onion, chopped
1 green bell pepper, seeded and chopped (optional)
3 cloves garlic, pressed
1/4 cup Worcestershire sauce
5 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can cannellini beans, rinsed and drained
1 (12 ounce) bottle chili sauce
1 (10 ounce) can tomato soup(optional)
1 (14 ounce) can beef broth
2 cups shredded Cheddar cheese
1/4 cup chopped jalapeno pepper (optional)
DIRECTIONS
Crumble the ground beef into a soup pot over medium-high heat. Cook and stir until browned. Drain off the grease, and season with salt to taste. Add the onion, bell pepper, and garlic; cook and stir for about 3 minutes. Reduce the heat to medium, and season with Worcestershire sauce, chili powder, cumin and oregano. Cook and stir for another 5 minutes.
Reduce heat to low, and stir in the chili sauce, beef broth, kidney beans and cannellini beans. Cover, and simmer for about 35 minutes. Ladle into bowls to serve, and top with shredded Cheddar cheese and jalapeno.

this is tomatoless and true tex mex the chili broth can be served over a square of corn bread
Tex-Mex Chili
3 tablespoons vegetable oil
21/2 pounds cubed beef chuck
2 cups chopped onions
3 large cloves garlic, minced
2 tablespoons sweet paprika (Hungarian is best)
1 tablespoon ground cumin
2 teaspoons kosher salt, or to taste
1 cup water
2 teaspoons crushed hot red pepper, or to taste
1 tablespoon masa harina (Mexican corn flour available in some supermarkets or Hispanic markets)
1/4 cup water
Cook beef in the hot oil in a heavy pan, turning and browning thoroughly on all sides. Stir in onion and garlic and cook, stirring, over medium heat for about 10 minutes.
Add paprika and cumin and cook, stirring constantly, for 2 more minutes. Add the salt, cup of water and crushed hot red pepper. Bring to a boil, cover, and cook over very low heat for 3 hours or until meat shreds easily with a fork. (Or place in a 300-degree oven.)
Stir together the masa harina and remaining water. Stir into the chili and cook 10 minutes longer. Taste and adjust the seasonings. Makes 6 to 8 servings.

DIRECTIONS
Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

Kraft Three Bean Turkey Chili
Ingredients
1/2 lb. ground turkey or lean ground beef
1 can (28 oz.) tomatoes, undrained, cut up
1 jar (16 oz.) TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 can (15 oz.) black beans, drained, rinsed
1 can (15 oz.) red kidney beans, drained, rinsed
1 can (15 oz.) great Northern beans, drained, rinsed
1 tsp. chili powder
1 tsp. ground cumin
1 pkg. (8 oz.) KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese
Preparation
COOK ground turkey in large saucepan on medium-high heat until cooked through, stirring occasionally.
ADD tomatoes, salsa, beans and seasonings; mix well. Bring to boil. Reduce heat to low; simmer 10 minutes, stirring occasionally.
SERVE topped with cheese.

i've never heard of it made without a tomato base, maybe check a cooking site like kraft.com or something, you can enter what ingredients u have and it will come up with a recipe for u!, good luck, what time do we eat!
