I defrost ist and everything and I still have a hard time cutting it up....!

The tough carcass that is under the breast meat is also a problem. Most chefs use sharp kitchen shears to cut through the meat and the carcass when they are cutting a chicken into serving pieces.

I ususally cut mine half frozen but you need a good knife...Maybe its not the chicken..its your kitchen tools
