The local airport is small and mostly for charter flights to the Mediterranean. However, Brugge is easily accessible from the UK by boat and train.
First of all, don't take the Eurostar to Brussels, since that is an enormous detour. Better to take the train to Lille in France and switch trains there, or, better still, take a ferry from the UK to Belgium (Oostende and Zeebrugge are the two ports) and from there it's about ten miles by train or bus to downtown Brugge.
A weekend may be too little for Brugge: there is simply too much to see and do in Belgium's main tourist destination. The most interesting parts are "autoluw" (semi-pedestrianized) or "autovrij" (pedestrianized) so you can rely entirely on public transport: buses, sloops on the canals, horse-drawn carriages. Don't bring your car: you wouldn't even be allowed to go downtown with it. Rent a bike.
For hotels, small family-owned boutique hotels are generally more romantic and no more expensive than the international chains. If you want to go cheap, book the youth hostel at www.vjh.be.
Finally, remember the name is Brugge! You will find more useful information using the city's real name than with Bruges, which is the French name, Brujas, which is Spanish, and so on.

None that would be helpful to you. Other than there is no airport in Bruges. The nearest ones are Zaventem (Brussel) and Middelkerke (Ostend).
There are no ferries to Ostend for foot passengers either to my knowledge or at least not from Dover. There is a ferry service from Ramsgate but it's cars only. I believe Felixstowe operates a passenger ferry to Zeebrugge. Zeebrugge to Brugge is about 20 minutes by train, if that much. Ostend to Brugge by train is about 25 minutes. Zaventem to Brugge will take you best part of 2 hours, if not more and if you fly to Middelkerke you will have to make your way into Ostend by bus or taxi most likely. I doubt if they operate a shuttle service.
Brugge and cheap does not go hand in hand. The cheapest would be the student type places or B&B. Check out these:

Try mytravel airlines very cheap and if you book your airlines and hotel/B&B separate, its much cheaper!!! You could save £100's
Always take extra care, i read a storyof two children dying on holiday by carbon monoxide poisoning so i suggest you should take a carbon monoxide monitor just incase!!

Try Travelscope - coach holidays and costs around £100 for three or four days. Probably won't get a weekend though.
