I have several recipes that sound wonderful (chicken caccitore; homemade veggie pizza, etc) except for the olives. We really don't like olives, and these recipes sound too good to just throw out otherwise. Any suggestions for substitutes that would complement these sort of dishes without reminding us of olives in taste or texture? Thank you.

Just leave them out all together. You may need a little more salt, but I wouldn't worry about it. The recipe should be fine without them.

I agree w/ rob lou - just omit the olives.

You can add fresh mushrooms for extra texture & flavor instead if you like.

Capers, or caperberries are kind of salty like olives...
