This has been a main-stay recipe of mine for YEARS.
Purchase thinly-sliced Pepperidge Farm WHITE bread. You do not have to, but for finger sandwiches, I always cut off the crusts. Makes them more attractive. Since you are going for a pink theme -- you may just want to spread this on tops of triangles of bread -- or you can do it the way I do it. Be SURE to cover tightly or they will dry out. So instead of directions below -- just spread onto slices of de-crusted bread, and then cut into either halves or quarters.
In a food processor or blender, or if you do not own either, you can mash by hand:
Well, you do not say how many you need to prepare food for, so for basic recipe:
1 eight ounce block of Philadelphia cream cheese
1 jar maraschino cherries, do not dump out the liquid
tiny, tiny pinch of salt
Place all ingredients into blender/food processor/ or hand mash. Add about one tablespoon of the liquid from the jar of cherries. (Or a wee bit more if still too stiff to spread)
Spread onto the thin slices of bread, cut into triangles, and wrap tightly in plastic wrap and place in refrigerator. Do not make more than one day ahead, otherwise, they will be dry and not tasty.
When you whip the sweet cherries with the cream cheese, you will have the most beautiful pink finger sandwiches known to man -- and speaking of men -- even GUYS like them!!!!

Dessert should be super easy since there are plenty of things you can make pink with food coloring, berries, etc. The tricky part is the savory stuff since adding food coloring to appetizers and main dishes may make the food pink, but not so appealing sight-wise hehe. However there are some that you might like to try out. Here are some I found:
For drinks, you could make pink lemonade or a sparkling fruit punch. To make the fruit punch, I usually just use a large punch bowl and first pour in about half a 2-liter bottle each of lemon-lime soda (such as sprite) and any brand of fruit punch. Then I taste it and see which one it needs more of (this depends on how you like it), and adjust it according to the taste. Fresh fruit slices of orange and lemon add a nice garnish, but you could add grapefruit too in order to keep with the pink theme.
Appetizers:

(this recipe is great because you can serve it buffet-style in a casserole dish or turn it into a finger food by serving them individually on toothpicks)

A fruit platter can have red grapes, watermelon, strawberries, red apples, pink grapefruit, cherries, etc.
You can make a punchbowl mix of strawberry sherbet, cherry 7-up, and a can of frozen pink lemonade.
Make an angel food cake and add pink food coloring, or pink cake with pink icing.
If your co-workers are humorous and you think you will not get into trouble, make a "boobie" cake, but instead of nipples, frost pink ribbons in that area.

Get a bag of white chocolate chips and melt them down. Spread on a baking sheet lined with parchment. Sprinkle with crushed peppermint candies or crushed pink jolly ranchers. Press the candy into the chocolate if you need to. Refrigerate to set. Break into pieces to serve for desert. What chocolate bark. Yum!

My girlfriend used to make potato salad and then add some beet juice to it. It didn't make the taste of the salad different, but it did come out a nice pink. Add the beet juice a little at a time until you get the color you want.

Cherry Fluff {This turns out a nice pink}
2 cans cherry pie filling
1 large can crushed pineapple {Drained well
1 can sweet milk
1 large tub cool whip
2 cups mini marshmallows
1 cup crushed pecans if desired
Mix everything well and chill a couple hours

I saw a potato salad in one of the answers but couldn't figure out what made it pink. My grandmother always added chopped beets in her potato salad and it made it into a beautiful shade of pink but tasted great as well. You can probably add beets to any potato salad recipe that you like. Good luck!

PENNE WITH PINK BACON SAUCE
1 lb penne pasta
1 lg jar Ragu spaghetti sauce
1/2 lb bacon
1/2 to 1 cup heavy cream
1 tsp. red pepper flakes
Cut raw bacon into small (1/4 to 1/2") pieces. Cook in large fry or saute pan until cooked, being sure not to overcook the bacon. Add spaghetti sauce and red pepper flakes to the pan with the bacon.
Stir, reduce heat to low and simmer for about 15 minutes to allow the flavors to blend.
Meanwhile, prepare pasta according to package directions. Drain.
Add 1/2 cup of heavy cream to the sauce and stir. Add more cream to taste. Sauce should be thick and pink.
Top pasta with sauce and serve!
PINK POTATO SALAD
6-8 medium potatoes, boiled
1 red onion, diced
1/4 c. dill pickle relish
2 boiled eggs (if desired)
3/4 c. Hellman's mayonnaise
1/2 c. Catalina dressing
Several hours before serving, boil potatoes in salted water until fork tender. Drain and cool slightly, then peel and slice.
Pour Catalina dressing over warm potato slices coating slices well. Allow to marinate in the refrigerator until cold. Add onion, pickle relish, boiled eggs and mayonnaise. Mix well and serve.
Note: Do NOT use "salad dressing" in this recipe.
PENNE WITH CHICKEN & SHITAKE MUSHROOMS
IN PINK CREAM SAUCE
1 lb. penne pasta
1 lb. chicken breast, cut into 1/2" strips, 2" long
1/4 lb. shitake mushrooms, chopped
3 c. heavy cream
4 c. tomato sauce
3 shallots, cleaned & diced
1/8 c. olive oil
Salt to taste
Pepper to taste
Flour to cover
Cook pasta as directed.
Sauce: Place 1/8 cup oil in fry pan. Flour chicken pieces. Saute chicken in oil until browned. Add shallots, cook 2 minutes more. Add tomato sauce; cook 3 minutes more. Add cream; let boil. Put pasta in sauce. Garnish with fresh basil.
