I'm just taking for example Leviticus 12:1-8.
If your Priest/ Minister/Chaplain/Spiritual Guide told you to do "all that".. would you sacrifice these doves?
I mean.. we don't do that stuff do we... it's just not relevant... so if not that.... why cherry pick the other bits you think you'd like to keep.... to the extent of finger pointing at people who don't hold the same opinion? Is it all or nothign? Or is it OK to cherry pick from the Old Testament the bits we think are awright?

Mindar ~ I accept this "What you do not want done to yourself, do not do to others. The rest is just commentary." So why do we need it at all?

Well, speaking as a Jew, who's entire foundation of belief is built on what you call "the Old Testement," I'd have to say yes, it is relevent.
A rabbi was approached by a gentile in ancient Jerusalem. "If you can summerize your entire system of belief for me in one sentence, I will convert," he said.
The rabbi looked at him and thought for a moment. "What you do not want done to yourself, do not do to others. The rest is just commentary. Now, go study."
Why is it that people always pull out the commandments on sacrifices to say the Bible's no longer relevent? Is the commandment to not murder no longer relevent? Is the commandment to keep a day holy no longer relevent? I dare say they are! But if you must point out the bit about sacrifices, examine the meaning behind the commandment: to honor G_d and to try to establish a connection to something larger then yourself. The part about burning a bird or calf or sheep or grain is just a means to an end. It was not the scent of the burning flesh that G_d found pleasant, but the devotion.
Should we then nit-pick what rules we can, and cannot follow? That, my firend, has been the basis for 2000 years of conflict between Christians and Jews. We say "No, you can't." Christians say "Yes, you can, because we have this guy who gave his life so you don't have to follow any more of those 'old' rules."

Creationists need it to support their claim that the world was created in 6 days. It does not have much relevance to anyone else.
It is interesting how people choose to ignore Exodus 35:2 and Deut 21:18-21 but believe that Leviticus 20:13 must be enforced (in spirit at least).
Edit: On second thoughts, it might have some relevance to historians to study how people of that time lived.

All of the books of Scripture are valid for today. What you may just seem as military and fulfilled prophecy have a lot to do with getting to know God. The entirety of Scripture tells us how to have a right relationship with God and our fellow human beings. Yes some books may have more on relationships with others than some other books but all have something to be gleamed from. However only the Holy Spirit and prayer can help you to understand this.

If not for the first the second would not exist. Of course it's relevant . The "Old" Testament is the Bible that Jesus of Nazareth had.
If you are questioning the relevance of the OT, then it's really your salvation you should be worrying about.
If you think the New testament is important above all, then how do you not understand the sacrifice that Jesus made for all of mankind once and for all, so that nobody ever has to doubt God for the fear of uncleanliness.

Let's see. Are the writings of bronze age desert nomads relevant today. Only as a case study in comedy. But why single out the OT, when the NT and Qur'an are just as guilty?

I would leave it where it is. I like the Old Testament. It shows me a lot of things about how Gd keeps His promises. It shows other things too, but that one is a really good reason.

I tore out those pages, along with the Gospel of Luke, the Gospel of John, all of Paul's letters (except 1st Corinthians), and Revelation According to St. John.
Now it all makes a little sense.
