That is a powdery mold on brie. You can serve it or eat it, but it's up to you. Okay to trim or not... it's personal taste only, because it is safe to eat. Since it discolors sometimes, I trim. I also watch for the nylon webbing that once held it all together, as it won't go down very well, won't melt etc... Some brands have that too.

You can do it either way. I find I enjoy it on if I'm heating it, but tend to remove it if having it chilled.
