Halloween pumpkin beef
1 to 4 lb. pumpkin
1 lb. lean ground beef
1 c. onion, chopped
Cooking oil
1/3 c. red pepper, chopped
1/3 c. green pepper, chopped
1 garlic clove, minced
1 tsp. salt
1/4 tsp. thyme
1/4 tsp. pepper
1 (7 1/2 oz.) can pitted ripe olives
1 (8 oz.) can tomato sauce
2 eggs, beaten
Cut the top from the pumpkin and scrape out seeds and fibers. Simmer in salted water (to cover) for 15 to 25 minutes or until tender and hot to touch. Drain. Brown beef and onion in 1 tablespoon oil. Add red pepper, green pepper, and garlic. Cook 1 minute longer. Remove from heat and stir in remaining ingredients. Spoon in remaining ingredients; add into pumpkin. Place on lid. Brush outside of pumpkin with oil and bake at 350 degrees for 1 hour. Let stand 10 minutes. Cut wedge out of the side to serve.
HALLOWEEN BEEF PIES
1 1/2 lbs. ground beef
1 med. onion, chopped
1 tbsp. chili powder
1 tsp. cumin, if desired
1/2 tsp. salt
1/4 tsp. garlic powder
1 can (15 1/2 oz.) tomato sauce
1 c. carrot, shredded
1 can (4 1/2 oz.) olives, chopped
1 can (10 oz.) refrigerator biscuits
10 slices process American cheese
Brown ground beef and onion in large frying pan. Pour off drippings. Sprinkle chili powder, cumin, salt and garlic powder over meat mixture. Stir in tomato sauce, carrot and olives. Cover and cook slowly 20 minutes, stirring occasionally. Roll each biscuit on lightly floured board to make a 4 inch circle; press each over the greased bottom of cup of muffin pan to fit snugly. Bake in 400 degree oven for 10 minutes or until lightly browned. Remove biscuit cups from pan immediately; place, cup side up, on baking sheet. Cut 3 inch circles from each cheese slice and cut each with a sharp knife to make a pumpkin face. Chop all pieces of cheese and stir into meat mixture until partially melted. Place an equal amount of meat mixture in each biscuit cup; top each with cheese face. Place in 400 degree oven for 3 to 5 minutes until cheese begins to melt.
HALLOWEEN DINNER
1 pkg. UNCLE BEN'S® Wild Rice mix
1 lb. Jimmy Dean pork sausage
1 lb. lean ground beef
1 lg. onion, chopped
Salt & pepper
1 c. celery
1 green pepper, chopped
1 can sliced water chestnuts
1 undiluted can cream of mushroom soup
1 pumpkin, hollowed out
Brown meat, saute vegetables. Add water chestnuts, soup, salt and pepper. Place in pumpkin, cover with top of pumpkin. Place in baking pan. Add water around bottom to keep from sticking while baking. Bake at 350 degrees for 3 hours.

Wendy's Chili
2 lbs ground beef
32 oz tomato juice ( not sauce)
29 oz. tomato puree
1 can ( 15 oz) red beans
1 med. onion, chopped
1/2 C. EACH... celery and green pepper
1/4 C. chili powder
1 & 1/2 tsp. garlic powder
Fry ground beef with onion until no pink remians. Drain well.
Combine with all other ingredients and simmer for 2 hours, stirring often
Make the day before.. it taste better after sitting in the fridge overnight. Serve with sides of chopped onion and shredded cheddar. Sliced jalapenos are nice . Take disposable paper bowls.

right this is yet another. no longer lc (except you have powder sugar sub handy), besides the incontrovertible fact that that is festive and actually good. Pumpkin Dip a million 8 oz..pkg cream cheese, softened 2 cups confectioners' sugar a million 15 oz..can pumpkin 3 tsp pumpkin pie spice a million tsp vanilla extract a million/2 tsp floor ginger Apple and pear slices Beat cream cheese and sugar. steadily upload the pumpkin, pie spice, vanilla, and ginger. Beat till delicate. Serve with fruit. Refrigerate leftovers.

You can get Pizza dough (Pillsbury), pizza sauce, peperoni, bell pepper and cheese then make a pizza that looks like Frankenstein (or just his torso) - you could make a pot pie (2 pie crusts and one of those freezer slow cook meals then cut the top crust to look like a jack-o-lantern and bake - really cute and very tasty, Mummy dogs -crescent roll dough, hot dogs - use the dough to wrap the dogs like mummy's then give 2 dots of mustard for eyes. 1 (6 to 8-pound) pumpkin
1 cup toasted croutons
4 ounces grated gruyere cheese
salt & pepper to taste
a grating of fresh nutmeg
3 quarts (12 cups) cream or milk
Cut top off pumpkin so that it can be used as a soup tureen & set top aside. Remove seeds & alternate layers of croutons & gruyere. Add salt, pepper, & nutmeg. Fill w/ cream or milk. Close the "tureen" as tightly as possible w/ the top of the pumpkin. Place in a large, deep baking dish & bake in a 425°F oven for 2 hours. Present the pumpkin at the table, remove the top, & using a spoon scoop out some of the flesh of the pumpkin & mix it in w/ the soup, serving each diner some of the pumpkin along w/ the soup. Serves 8 to 12.

Stew made in a crock pot? Then you just take the crock pot to work in the morning and plug it in on med until it bubbles then turn it to low for simmer.
