I'm a great cook, and I love doing it, but I lack the imagination to think of several new things every night for dinner. What are some of your favorite recieps and what are you making tonight?

We're having chili and cinnamon rolls tonight. Mmmmm.
Let's see. Other regular meals at our house are meatloaf and mashed potatoes with green beans, Fried tacos and spanish rice, chicken parmigian, Here's some pf the recipes that I use:

Family Meatloaf
1 pound lean ground beef
1/3 cup crushed Ritz crackers
1/2 cup shredded Cheddar cheese
2/3 package dry onion soup mix
1 egg, beaten
2 tablespoons ketchup
2 tablespoons steak sauce (like A1)

Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the egg mixture into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
Bake in preheated oven until the meatloaf reaches 160 degrees and is no longer pink in the center, 45 to 60 minutes.

Homemade Chicken Parmigiana
1 tablespoon butter
1 teaspoon minced garlic
1/3 cup minced onion
1 can diced tomatoes with juice
1/2 teaspoon sugar
1/4 cup heavy cream
salt and pepper to taste
1/3 cup fine dry bread crumbs
2 tablespoons freshly grated Parmesan cheese
1/2 teaspoon dried oregano
1 egg, beaten
2 tablespoons milk
3 skinless, boneless chicken breast halves
3 tablespoons olive oil
3/4 cup shredded Mozzarella cheese
1 tablespoon freshly grated Parmesan cheese

Melt butter in a saucepan over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 2 minutes. Pour in diced tomatoes and sugar. Increase heat to medium-high, and bring to a simmer, then reduce heat to medium-low, and continue simmering for 10 minutes, stirring occasionally. Once the sauce has simmered, stir in the cream and season to taste with salt and pepper. Simmer for an additional 3 minutes. Lower heat and keep sauce warm
Stir together bread crumbs, 2 tablespoons Parmesan cheese, and dried oregano; set aside. In a small bowl, whisk together egg and 2 tablespoons milk until blended. Dip flattened chicken breasts into the egg, then press into breadcrumb mixture to coat both sides, shaking off excess.
Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook on both sides until they reach an internal temperature of 160 degrees and the bread crumb crust is golden brown, about 10 minutes.
To serve, spoon sauce over chicken and top with Mozzarella and Parmesan cheeses. Let stand a few minutes until the cheese has melted from the heat of the sauce. (This is one of my favorites!)

For my tacos I just make taco meat and then put it and some shredded cheddar in flour tortillas. Fry them in hot oil a couple of minutes on each side and then top as normal. YUM! I use a toothpick to secure them together at the top while frying.

Spanish Rice - from one of my questions on Yahoo Answers!
1/4 cup vegetable oil
1 cup long grain rice
1/4 tsp. salt
1 tomato, diced
1/2 onion, chopped
3 cloves garlic, minced
1 tsp. cumin
1 T. tomato paste
1 c. water, boiled

In a medium saucepan over medium heat, fry rice in oil until slightly golden, about 3-5 minutes. Add salt, cumin, onion, and garlic and saute 1 minute. Add tomato, tomato paste, and boiling water. Bring to a boil, cover and reduce heat. Cook about 20 minutes.

I am making penne with a quick sauce that I make sometimes.
Here's the "recipe" (I use quotes because it's just something I throw together!):

1 box frozen chopped spinach, cooked in microwave
1 large sweet onion, sliced
1 can diced tomatoes
1/2 - 1 jar marinara or tomato basil sauce
Salt, pepper, hot pepper, dried basil, dried oregano, olive oil

Saute the onion in the oil with all the spices until translucent. Add spinach, tomatoes and sauce. Simmer approx 10 minutes. Serve over pasta with grated parm cheese.

It's really tasty and you get lots of veggies!

My toddling daugher and I made vegetable pizza. You ought to be able to find a dough recipe in any recipe book. For toppings, I just use a can of tomato sauce and add pizza seasoning and grated carrot to it (I've read that the beta caratene in carrots helps the absorption of the lycopene in tomato products which help prevent cancer). On top of the sauce, sliced, raw spinach and peppers and onions. Then cheese, then steamed broccoli.

It's fun to make if you have kids. Mine loves kneading the dough and then adding the spinach and cheese. It also does a good job of hiding all the vegetables!

How about an easy and delicious pasta dish?

In a pan of hot olive oil, saute veggies, like onion, garlic, peppers, broccoli, swiss chard, and whatever else you like. When they're soft, add tomatoes (fresh or canned), and meat (optional), and simmer for a half-hour or so.

While this is happening, boil up a pot of pasta (I like farfalle or rotini) until it's "al dente."

Drain the pasta, add it to the veggies, simmer another few minutes, then serve with fresh feta cheese and red wine (shiraz or cabernet).

Goes well with salad too.

I am just having Tecate for dinner tonight. I could really go for some of my homemade cheese enchilada's though. They are fabulous I must say.

I don't have a name for it, but I'm cutting up a turkey kielbasa, tossing it in a frying pan with a bag of frozen assorted peppers, let that cook for a few minutes, then stir in a can of sliced potatoes, and a can of sauerkraut, warm them, and viola- dinner's done. Super easy, I'm tired tonight- my two babies have worn me out. ;o)

i'm too have to much studying to do so i can't cook. i'll probably just have cereal. i know, it's a really unhealthy thing to have but i don't have the time and energy to make anything. if i could have anything in the world it would be a sauteed mushroom and swiss panini and and herloom tomatoe salad mmm. oh well. looks like honey bunches of oats tonight.

I made chicken breasts with apples and onions in the crock pot and was it super good. 1 pkg bone in chicken breasts, skin off, 1 small onion peeled and sliced into slices, and 2 apples peeled and sliced into slices 1 can of cream of chicken soup, and 1 can of chicken stock i use low sodium so i control the salt in it... directions: peel and cut onions and apples and line the bottom of the crock pot dish, and sprinkle with salt and pepper and 1/2 tsp rosemary either dry or fresh i used dry., place skinned chicken breast on top and salt and pepper them and add 1/2 tsp rosemary on top of the chicken breasts as well. mix 1/2 cup of cream of chicken soup and 1 cup of the stock together and pour over chicken... cook on low for 6-8 hours and it falls off the bones and is soooooo good. for side i did this, i had 2 1/2 cups of chicken stock and the other half of can of cream of mushroom soup and mix it together in a kettle and add 2 tsps of butter or margarine to it and a pinch of salt to kettle and heat to boiling, take off and add 3 cups of quick cooking rice and it is sooooooooooo good and was a good accompanient to dinner ...plus i made steamed broccoli and corn, and garlic and cheese biscuits they loved it...
