I was taught that a mediator is one that mediates, especially one that reconciles differences between disputants.

Well then what does Jesus mean when He says "There is One God and One Mediator between God and Men, the Man Christ Jesus?

It means that Jesus Christ will stand before God and argue our righteouness as one covered by His blood as Satan argues our sinfulness and tries to deny us entry into heaven. No matter what Satan tells God we did, Jesus will tell Him that the sin is gone, covered by His sacrifice. It kind of reminds me of a comedian I saw once, I think it was Eddie Murphy, on the guy whose wife actually saw him cheating and all he says is "Wasn't me". No matter what the wife says, his response is the same, "Wasn't me." Now, Jesus won't lie and say the sin never happened, but He will argue that we are righteous in spite of our sin, because He paid the price for it already.

He means that He is the mediator between God, and all mankind.
What you were originally taught is correct.
Since the Garden of Eden, Mankind has been at odds with the Father in Heaven. Jesus being the only begotten of the Father is the perfect mediator, having both a human nature, and the nature of God also.

I don't think Jesus(PBUH*) ever said anything about men worshiping him as a God instead of the one God. But it means that you should use someone else to intervene between God and you which is idolatry and is what the Christians are doing.

Jesus Christ is equal on both plains; he is both man and God. He is perfect and sinless, yet his has suffered, been humiliated, tempted and ridiculed just as we have in our lives.
