I have asked the guy who runs that department in a local supermarket. He said if it is fresh you need to eat it by the SELL BY date. However if you freeze it by that date you can keep it in the freezer for months and then defrost for cooking soon. Wrap it well before putting it into freezer to avoid freezer burn.

That's a decision you have to make! Mine is 1 day if kept properly cold. My criteria is based on Good Eats not survivability !

If it is well rinsed and then cooked over 165 degrees for 30 seconds (inside) then you'll be fine.

I wouldn't go any longer than three days. If you can't use it by that time, freeze it.
