If you're sick of the pot roasts, I have a suggestion. My favorite chicken, corn and black bean chili. I take a whole chicken (bones and all), season it well, then add chopped onions and peppers, a can of sweet corn, a can of black beans, a can of tomatoes and one of tomato paste, a bay leaf and various other spices ... whatever you like there. Chili or taco seasoning is great, too. Then just let it go for a few hours, your nose will tell you when it's ready, plus all of the meat will be falling off of the chicken.
I know it sounds like a pain, to pull the chicken bones out of the pot before eating, but trust me. I've tried doing this same recipe with pre-cut and boneless chicken to save myself the work, and it never turns out as well! I think it has to do with the flavor that comes out when you boil the bones, but whatever it is, it makes it goooooood.

To Die for Crock Pot Roast
Categories : Beef
1 beef roast -- any cut, to fit size of crock pot
1 Pkg Hidden Valley Ranch Dressing mix
1 pkg brown gravy mix
1 pkg Italian Dressing mix
1/2 C water
Combine mixes well and sprinkle over roast in pot.
Pour water into bottom of pot. Cook on low for 6-7 hours.
All Day Slow Cooker Chicken
Serving Size : 6
Categories : Chicken
2 Tablespoons Orange Juice -- Frozen
2 Cups Chicken Stock
1 Teaspoon Salt
1/2 Cup Tomato Paste
2 Tablespoons Soy Sauce
2 Tablespoons Brown Sugar
2 Cloves Garlic -- Minced
1 Dash Allspice
4 Lbs Chicken Breasts & Thighs
1/4 Lb Mushrooms -- Sliced
2 Tablespoons Margarine
1 11 oz Can Mandarin Orange Sections -- Drained
1/2 Medium Bell Pepper -- Sliced Lengthwise
1/4 Teaspoon Ground Ginger
3 Tablespoons Cornstarch
1/4 Cup Cold Milk
1/4 Cup Cold Water
The night before you plan on slow cooking your dinner, mix together the orange juice, chicken stock, salt, tomato paste, soy sauce, brown sugar, garlic and allspice in a large, closable container large enough to also hold the chicken pieces.
When marinade is thoroughly mixed, add the chicken, close container and refrigerate until morning.
In the morning place the chicken in the slow cooker/Crock Pot and add marinade up to about an inch from the top of the container. Set the cooker on low and cover.
6 to 8 hours later, turn the cooker to high. About an hour later, saute the sliced mushrooms in the margarine or butter. Then add the mushrooms (with pan juices), mandarin sections, green pepper and ginger into the slow cooker and stir thoroughly.
Mix together the cornstarch, milk and cold water, then gradually add into the slow cooker while stirring until the entire mixture thickens a bit.
Re-cover the slow cooker/Crock Pot and let simmer for 15 to 30 minutes until serving.

Put a beef roast in the crock pot. Cover with an entire jar of salsa. You may need to add a little water (I usually put the water into the empty salsa jar and swirl it around to get out any remaining bits). Cook for several hours - I usually start it on high for an hour or so, then switch it to low and just let it go all afternoon. When it's done, it should be very tender. You then shred it with a fork and use it to make fajitas.

1 envelope Lipton onion soup mix
Brown the chicken in a little oil or butter in a hot frying pan and toss into the crock-pot. Mix the sour cream, wine, and Lipton soup and pour over the chicken. Cook on low 8 hours. Serve over rice or noodles or with mashed potatoes, and a green salad and rolls.
You can substitute 4 pork chops for chicken, or 4 small chuck steaks (4-6 ounces each). Use red wine for steak...red or white for pork.

Get a roast, beef or pork work fine. Mix 2 cans (1 large) cream of mushroom soup, 2 packets of dry onion soup mix, 2 tablespoons each of: parsley flakes, Worcestershire sauce and stake sauce. Mix well and pour over the roast. You can add extra fresh onions and mushrooms if desired. Cook for 6-8 hours or until meat is tender. This makes a wonderful gravy for over the meat and mashed potatoes. Our family loves it!

Crockpot Jambalaya Recipe
Ingredients
* 1lb cooked frozen shrimp without tails
* 1 lb sliced andouille sausage
* 1 lb boneless/skinless chicken breast halves, cubed
* 1 cup chicken broth
* 1 (28 ounce) can diced tomatoes with juice
* 1 lg chopped green bell pepper
* 1 cup chopped celery
* 1 lg chopped onion
* 2 tsp dried parsley

* 2 tsp Cajun seasoning
* 1 tsp cayenne pepper (or to taste)
Directions
1. Combine sausage, chicken, broth, tomatoes with juice, green bell pepper, celery, and onion in crockpot. Season mixture with parsley, thyme, oregano, Cajun seasoning and cayenne pepper to taste. Cover, and cook 3 to 4 hours on High or 7 to 8 hours on Low. Add shrimp during the last 30 minutes of cook time.

I season a few pork chops, chop a few onions and bell peppers and pour a couple cans of cream of mushroom soup and a can of water and let her cook on low. My husband loves it. You don't need to use any salt though, the soup has plenty. Serve it over rice. I do as a dash of Kitchen Bouquet (browning liquid) before serving, it just makes it prettier. I threw it together one time, because I got tired of the beans and rice thing. Good luck. 2D
