I've not made Hummus before, nor even tasted it but i want to give it a try. Does anyone know a traditional and very tasty way of making it, and how do you eat it? I know you're supposed to dip pitta bread in it but i also notice that you're supposed to fill the well in the middle with oil of some sort?

Any help greatly appreciated.

HUMMUS

1 12-oz can garbanzo beans
1 clove garlic
2 tbsp extra virgin olive oil
2-3 tbsp tahini sauce (sesame paste)
juice of 1 small lemon
½ tsp salt

Drain 1/3 of the water from the can of garbanzo beans into a small bowl. Set aside for later use.
In a blender, mix together the garbanzo beans with the remaining can water and the rest of the ingredients.

Blend for 1-2 minutes until a smooth, slightly fluid paste is formed.

If desired, add small amount of the saved can water and blend to create a more fluid consistency.

Pour garbanzo beans into blender, booking a pair of tablespoon for garnish. place lemon juice, tahini, chopped garlic and salt in blender. mixture until creamy and properly mixed. flow the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the appropriate. Garnish with reserved garbanzo beans.

You could put a bit of oil on the top. I don't know exact measurements but the way I've done it is with (cooked) chick peas, tahini, lemon juice, garlic, olive oil.

Chick peas, olive oil, crushed garlic, with some lemon juice and salt/pepper to taste.
