I wanna make a nice omelette for breakfast.....what should I add to it? (I don't like pork.....)

First off, what type of omelet would you like? Plain? Western? Tex-Mex?

I like to make my omelets like crepes. First off, I chop up onoins, potatoes, green pepper, and ham. I run this thru a blender, pulsing 6 times, 1 second each time. Then I take this and saute in until it is just al dente. Remove it from the stove, place the saute in a warm dish,cover,

Now, for the omelet itself, I use "Egg Beaters".

Heat a cast iron skillet on medium heat. DO NOT add any thing to the pan. When it is hot, pour the Egg Beaters into the pan. Swirl the mixture around in the pan, let cook, until the top of the omelet is well set, and the bottom, golden brown

Turn the omelet over. This is tricky, so be very careful not to allow it to tear. Brown, and remove it from the pan unto a warm dish or a warm cutting board.

Now, take some of the sauted meat and veggies, and spread it from the center out, on the omelet. Not to thick, and leave about 2 inches around the edges.

Now, gently began to roll the omelet. After the second round, fold in the edges, and finish rolling. You can top this off with salsa, melted cheese, or sour cream. Enjoy

I once tried this at a friend's house and it was great.

Diced tomatoes and parsely are first fried with green onion.
Add some freshly ground spice ( garam masala)
You make this spice by adding
Whole peppers, cardamon, coriander seeds, cumin seeds,
nutmeg, bay leaf, cloves. Grind in a mill. The fresh spices really makes a difference.
Add to fried tomatoes, onion and parsely and add the egg.

It was really awesome.

Another recipe we make at home is we dice potatoes and green onions and fry until potato is cooked and add the omelette to cook.

To answer the first part of your Q: I really like plain omelettes: 3 eggs beaten with a tablespoon of cold water, then slid into a hot omelette pan with butter that has started to turn brown and is nut-scented....

for fillings (if any) I like a couple of spoons of snipped chives.... cook them briefly in the omelette pan with some butter, remove them to a side plate, make your omelette then as you are rolling and finishing, slip in the chives ... plate it.

The best is a sharp cheese like cheddar. If you love veggies take advantage and use spinach, broccoli, mushroom, or onion. My brother always loved green veggies and cheddar in his omelette's.

Taco Omelette.

Seasoned ground beef (cook it separately first)
Cheese ( I use pepper jack & cheddar)
Onion, & Black Olives inside.

More cheese, sour cream, and salsa or chopped tomato on the outside.

Yum !

Swiss Omelet Roll 1 c. milk 6 - 8 eggs 1/2 c. flour S&P 1/4 tsp. allspice 1/2 c. chopped roasted red pepper 2 oz. thin slice ham 1 c. shredded swiss cheese basil and spinach leaves Preheat oven to 350 degrees F. Line bottom of 15x10" jelly roll pan with foil and spray with cooking spray . Combine eggs , milk , allspice ,flour , S&P. At med. speed , blend , then pour over foil . Bake 10 min. Layer with rest of ingredients ; roll like jelly roll, bake 8 - 10 min. longer or until eggs are set . , slice and serve .

how about lots of different herbs- i've tried thyme, parsley and basil, which is delicious, with some mushrooms thrown in and some tiny cauliflower pieces.
Or how about a baked omelet, like a fritatta? you can scale down a recipe that's meant as a main meal for breakfast.
Another idea would be to layer your omlet ingredients in one of those small souffle bowls (herbs, veg, then crack an egg on top with seasoning), top with some cream and grated cheese and bake for about 10 mins (oeuf coquette)
