I know how to set a certain font and size as default, but I also want to be able to alter the spaces between each lines... which I know how to change... but is there anyway that we can set this as default??

Two ways:

1. Open a Word document.
Format as you like - margins, etc.
Select Format, Font, Character spacing

select expanded or condensed - as you wish
you will see an example of how the font will appear
on the bottom left, click default
when asked if you want this to affect the template, click Yes

The template, normal.dot, will reflect your changes

On the toolbar you have a line spacing icon near the bullet and number icon. Just click on the downward arrow at the side to reveal the list of options, but remember to firstly highlight the text. Alternatively, Ctrl1 gives you single spacing, which you type in by default, Ctrl5 gives you one and a half spacing and Ctrl2 gives you double.
If you want any other type of spacing, such as to fit text that goes onto two pages by just one or two lines yet you want it well spaced out, say double spaced, go into format, paragraph and change to multiple line spacing and type 1.8 say. Less than double spacing, but still more than 1.5 but could free up the extra space and bring those two lines or so that went onto another page, back onto the original.
Sorry just read your question properly.
set your line spacing to how you want, then save it as a style, but clicking on the downward arrow to the side of the style box and setting up a new style. This way you won't change the normal template which dictates the style.

Format>paragraph should give you what you need.

However, to really have fun, go to Format>styles and play with the controls there. You can build the "style" (font, font size, spacing, indent.....) or "look" you want and everything you choose will follow that style.

FYI
Kerning is the technical word for s p a c e within a word.
Tracking is the technical word for space between word/words.

Leading is the technical word for space between lines.

If your document already contains text formatted with the properties you want to use, select that text.

On the Format menu, click Font.

Select the options you want to apply to the default font.

Click Default.

Any new document you open will use the font settings you selected.
