yes you can substitute but olive oil will significantly change the flavour. depending on how much also the texture. one of your answer people was right often used with pizza dough and foccacia bread. to me it gives an earthy taste. however in cakes and other sweet breads it tastes odd to my palate because of the earthy flavour. the amount substitutes the same. best in a hearty bread. i should think.

Olive Oil is good in most any recipe. It makes good bread, that is for sure...depending on the type of bread you are making.
