It doesn't, at least I don't refrigerate.
The high salt content prevents stuff from growing in it.

Okay obviously a lot of people are *******. SOME soy sauce does need refridgeration. The kind I buy says to refridgerate after opening. The watered down packets you get from chinese places, no. So to the jerk who says you should research before you post, you the pot or kettle on this one?
Anyway, I don't know why soy sauce needs to be stored in the fridge except that worcestershire sauce also needs to be, and that is a main ingredient (which contains anchovies . . . so there ya go). There are so many different kinds of soy sauce too which vary in salty-ness and ingredients. SO my main point. Don't shoot off your mouth other posters. GEEZ!

Soy Sauce does not need refrigeration.
Also FISH sauce is made of anchovies not soy sauce (Git R Done) Soy sauce is made from SOY!!!!!!!

It doesn't The high salt content makes it safe to store in an unrefrigerated state.
There may be some esoteric quality advantges to storing it refrigerated but from a product safety position there are none

because the biggest part of soy sauce is anchovies,yuck! i don't see how anybody eats that stuff.i just found out that's what soy sauce was made of.

Why would you ask this question without first checking to see that YOU DO NOT HAVE TO REFRIGERATE SOY SAUCE.
If you asked, do you have to refrigerate soy sauce, I would not be in your face, but you didnt even bother to check.
