I know they can be switched out, that's not the point. I'm just curious. Almost every road bike and ATB come with quick release wheels. But every single-speed messenger bike doesn't. I'm just wondering what the reason is behind that.

Two reasons. Firstly, track bikes which are the foundation of messenger bikes require fixed gears with solid axles. This is for safety when racing at high speeds with powerful riders. The practical reason now is that these bikes are routinely left locked up on the street in urban settings. These are areas with a very high rate of bike theft. The wheels are the first things to go.

Gimme Keep the quick releases. It makes your own efforts to change a flat more difficult. Use the Ulock as shown. Get at least a 1/2 inch cable. I like the Schalage 6 ft x 5/8 cable lock the is available at Lowe's..... probably else where too. Run the cable through the back wheel, frame seat and front wheel.. then through the fixed bike rack. If you are in a high loss area take the saddle with you... even the front wheel. Us the back pack you carried your locks in to put the saddle in. They will have to carry the bike off if they can defeat both locks! Soccerref

All of these answers are legitimate answers. Also, the reason these are called "fixies" is because they are fixed gear bicycles. They do not have a freewheel like a standard road bike- meaning you can't coast while in motion with the a fixed gear rear hub.

Speed. Most messengers are fast,quick and need to violate every traffic law written. So, they need to be bolted down for safety and from people trying have them killed. Besides time trial rules for Velodrome cycles require all wheels to be on extremely tight. Why do call them "fixies" anyways ?

It is so nobody can still your wheels when you are in a building. You can lock up your bike but how can you lock up every part...
