Half a cup per serving, but if you have happy eaters, one cup per serving. General rule.

When I worked in a deli, it was calculated to 4 servings per pound of potato salad. I say it depends on the type of 'eaters' you have invited and how much other food you have made. For that many people, if you are making homemade, I'd start with a 20 lb. bag of potatoes. The good thing is that potato salad will keep for a few days refridgerated, so if you have more than you need, you can either send home 'doggie plates' or save it for another meal.

If you buy a large bag of potatoes that will suffice for everyone I figured about one large potato for the adult and a medium one for the children in total I would make about 40 to 45 potatoes .I assume that you are having other salads as well like a bean salad !
Everybody has a different appetite some eat more and some less! If you have leftovers you can always have it the next day.

I've always been taught 4 oz. per person as a serving. Some eat more, some eat less, or even none. And depending on how much more stuff you're serving, if it's a lot of food, people probably won't come back for seconds.
