I usually use the brown skin potatoes, but wasn't thinking when I grabbed a bag of red ones. Answer me ASAP, cause I wan't them tonight, but don't want to cut them and waste my time and potatoes if they won't be any good. Thanks!

You can use them, but I think your going to be disappointed. You won't be able to achieve the texture that you are looking for and honestly, the skin itself tastes different. Save the reds for garlic dill potatos and buy yourself a bag of russetts tomorrow.. :)

Probably didn't make it in time for your meal tonight, but.....the answer is that baking potatoes have a more "leathery" skin so will hold up well for stuffings and extra baking without collapsing.

Redskin potatoes aren't used commercially because they are a bit to fragile--but you can use them at home, if you baby them. The trick is to bake them until you can cut them in half, then scoop out the centers, leaving at least 1/4 of an inch around the edge. Then bake them again, to dry them somewhat--which makes them hold up better. You can melt cheese in them, bacon bits, spring onion tops, put sour cream in--the whole deal.

I would have cut the chicken leg quarters in half before putting them in the oven. I always soak chicken in a bowl of water and clean off excess fat and skin before cooking it. When the chicken pieces are big, I soak them in warm water longer so they will cook thoroughly. Don't worry about the blood and stuff oozing from the chicken onto the potatoes. Eat the spuds. My grandma used to make ShakeNBake chicken a long time ago. I loved it. My ex-wife use to make chicken thighs slathered in BarBQ sauce in the oven. In the winter, I put a whole chicken with potatoes in a roaster pan in the oven. It's a good wholesome meal and not expensive. Good luck.

I think they'll be great. I prefer a red skinned potato anyway - better texture.

You'll have to cook them longer because of the thinner skin in order to get enough substance to hold up. They will be good, but you'll have to time it right to get them almost burned but not quite.

I dont think so i dont realy like the red ones they have a different texture which i dont like but thats just my prerence
