There is substantial medical evidence that hypnosis is real, but even the experts aren't sure how it works. With respect to a "child-like" state of mind, while in hypnosis the subject is generally in a relaxed "trance" state which is passive, receptive and literal-minded - the logic, reasoning, analytical thought, worries and "masking" turmoil of the rational, conscious mind are bypassed. Here are some links with various theories and additional info. on hypnosis:

Effecting change through being hypnotized by a licensed practitioner (aka hypnotherapy) seems to be a bit iffy - I have several friends and relatives who tried it for losing weight and to stop smoking without success. However, if done consistently, effecting change through a combination of self-hypnosis, affirmations (a/k/a auto suggestions) and therapy definitely works, including for controlling anger, losing weight, stopping smoking, overcoming depression and/or addiction.
Affirmations and self-hypnosis should be performed every day in at least two sessions per day (best times are first thing in am and last thing at night), with at least 10 repetitions each session (many people do 100 repetitions per session initially) - stick with it, because it WILL work. Self-hypnosis can be affirmations on CD, tape, or computer played at low volume on a loop just before you got to bed or even while you sleep. Meditation is also a form of self-hypnosis. All of these work even better when combined with relaxation and breathing techniques. Links on how to write affirmations here:

In addition to affirmations and self-hypnosis, therapy is almost always essential to identify and treat root causes. For example, you may stop yourself from overeating with a combination of self-hypnosis and affirmations - but if the overeating was a coping mechanism to handle an unresolved emotional issue, then other negative issues (such as severe depression, anxiety, anger, etc.) are likely to arise until the root cause is identified and addressed. Of course, if there is no underlying root cause other than bad habits, affirmations and self-hypnosis will work just fine without therapy. But I wouldn't bet on this being the case.
For really minor issues, standard "what do you think about that" therapy is fine. Otherwise, skip the counselors, social workers and case workers (most of whom are not licensed or trained to do more than ask questions and listen sympathetically) and find yourself a licensed psychologist who practices cognitive therapy and has a PHD or a PsyD (or Masters if experienced and/or highly recommended). Cognitive analytical therapy combined with cognitive behavioral therapy is probably the best therapy for effectively dealing with issues like anger, addiction and/or depression. Hypnoanalysis, in the hands of a responsible professional, may also be useful as it can be used to access emotions and events in your subconscious which your conscious mind is unable or unwilling to deal with. As witness AA, Weight Watchers, Emotions Anonymous and comparable organizations, participating in a group with similar problems is also a huge help. I happen to know a bit about hypnosis. First you need to understand what it is. It is simply a way of concentrating all of your attention on one thing while eliminating all outside interference. This results in what is commonly called a trance. If you ever drove along the highway and suddenly realize that you have just driven several miles without paying attention, that is a form of hypnosis.
Anyone with a normal ability to concentrate can achieve this heightened state of focus. During that time, your mind is more likely to accept suggestions without the normal amount of prejudice suggestions usually receive. Basically, that is all there is to it. If a suggestion was made to you that when you feel like eating you instead want something else (substitution) or if your anger is getting out of control you remember something else it may be an effective aid.
It cannot make you loose weight, stop smoking or anything else if you really want to continue those things. It can only help if you really want to change. Just like the pilot of an airplane, a little cross wind can make the airplane change course, it cannot do so if the pilot keeps fighting it. However, if the pilot will simply allow it, the airplane will leave the course it is on and head another way.

Hypnosis has been proven to be a legitimate practice but it is not effective on all people.
You have to be compliant to it and believe that it works if that makes sense. If you were to walk into a hypnosis session with this attitude of "this is dumb, and doesn't work" it will probably render no effect.
You can get other more effective treatments for anger control with behavioral psychologists.
Hypnosis has worked very well for people with Post Traumatic Stress disorder.
I still would only suggest this treatment as a last resort, it is an iffy practice that renders moderate success.

If you're familiar with hypnosis, then you've no doubt heard of Master Hypnotist Steve G. Jones. His book, "Ultimate Conversational Hypnosis" has been voted as the best hypnosis course ever made. The book is also available in electronic format at: http://www.hypnosistocontrol.net
If you want to get an edge in everyday communication and lead other people towards your goals this is a must read.

Hypnosis does work and can help change beliefs - help with phobias, etc. It is really a deep state of relaxation. By helping a person relax certain muscles - the mind relaxes and goes in to a trance - and is open to suggestion. People can't be made to do anything that is against their principles. Stage hypnotists try to select people who don't have many principles and are exhibitionists by nature - then they can get them to do silly things. What we believe controls the way we behave - both counselling and hypnosis can change that.

Oh, gosh, yes - it works! All you need to do is be a little bit tired and promise to do something you later realise was being like the village idiot to know that it works.
