I want to become someone who helps people who are overweight/obese, I give them diet plans and exercise plans and target the issues on why this person is fat, etc etc.

A Nutritionist / Personal Trainer. - Usually you negotiate the price of your services with your customers. Or if you're employed by a company you'll get salary and comission. Most trainers and nutritionists ( if their plans ans services are legit and work well) make very good money. It's a competative field, the best get the most work.

I think you are talking about a nutritionist. I don't know what they make, but if this is what you want to do it wouldn't matter, what the pay is. Do what makes you happy.
