If you put the cut stem of a plant or the entire plant with its roots in red ink after a few days the leaves will start to get a red tint. If you then cut the stem you can see red dots along the cross section. The best plant is the balsam tree whose leaves tend to be transparent enough to see the colour. The idea is that plant absorb water through their roots and the red dye moves up the vascular bundles of the stem to give the colour. It would be a good project since you could have plenty to talk about the transpiration stream etc. I think basil stems would also work.

I agree with Tarik. Also, leaving plants in the dark makes them etiolated. That means that these plants will lose their chlorophyll and be yellowish. Have you ever picked up a board or a piece of plastic that has been left on the lawn? The plants underneath are all yellowish because they've been deprived of light. Likewise, the innermost stalks of celery are yellowish green while the outermost stalks are a darker green. Same thing.

If you put plant that needs low light to grow, to strong light or under ultraviolet light, its leaf color change to dark red.

if you have a white flower you can put it in water and add food coloring. the food coloring will tint the petals of the leaves. it's actually pretty cool. that should work. and if for some reason it doesn't, there's always spray paint, good luck.
