I love this with the cajun flavors- along with the rice, fried okra would be perfect...but green beans would be good as well!

Tilapia with cajun salsa
Cajun Seasoning to taste
4-6 tilapia fillets
1 can black beans 14 oz, drained and rinsed
1 can white shoe pea corn, drained and rinsed
1 can chopped tomatoes, drained
1 red pepper chopped finely
1 bunch green onions, chopped finely
2 tablespoons fresh cilantro, chopped
2 teaspoons cumin
juice from 2 fresh limes

Season tilapia to taste with the Cajun seasoning. Add olive oil to saute pan, saute 4-5 minutes on both sides, reduce heat. Mix together in a medium bowl, beans, corn, tomatoes onions, cilantro, cumin, salt to taste, slowly add the lime juice to taste. Spoon over fish, serve on a bed of cooked rice.

I love this fish. It taste great just grilled, if you have a grill...but if not, here is a good way to fix it....

Tilapia Lemon Parmesan
2-1/2 lbs. Tilapia fillets
2-4 tsp. butter or margarine, softened
2 tsp. fresh lemon juice
Lemon-Parmesan Sauce

1 cup mayonnaise
2 tbl. fresh lemon juice
1/2 cup grated Parmesan cheese

Garnish
2 lemons, sliced fresh parsley

Rinse the tilapia fillets in cold water and drain thoroughly.
Top with butter or margarine and lemon juice.
Broil about 4 inches from the source of heat for approximately 5 to 6 minutes or until the fish is opaque and flakes easily when tested with a fork.
Top each portion with 1-2 tbl. of Lemon-Parmesan Sauce; broil 2-3 minutes or until sauce puffs and turns golden brown.
Place fillets on serving plate; garnish with lemon slices and fresh parsley

If u like salmon & you have a bar-b-que grill (a small one is fine) I think you will like this recipe. Choose a salmon fillet that is approx. one pound. Tear off a piece of foil big enough to make a pocket. Pour a little bit of Lawry's garlic lemon marinade in the middle of the foil, dip the salmon meat side in the marinade flip over. Lightly season the top of the fish with onion salt, garlic salt, lemon pepper & McCormick's montreal salmon seasoning & a little more of the marinade. Pull the long ends of the foil evenly pinch the corners & fold them then seal the top continue to roll the foil down until it's tight against the fish, fold the ends of the foil repeating the steps above. preheat grill on med-high lay the fish meat side down on the grill for 6-8min depending on thickness turn over & cook for another 6-7min let stand for about 10min. Open the pouch fish should be flaky. Pour the sauce from the foil on the fish & enjoy!!! This may seem complicated but it's really quick & easy. If you dont have a grill you can put it in the oven @ 300degrees cook for 10-15min, flip & continue cooking for another 10min. let stand in foil.

Make tilapia all the time...simply flour, salt and pepper fish filets lightly, brown in a med. hot pan with butter/olive oil mix. Turn. Do not overcook.

I like to make stuffed tilapia. Make a corn bread stuffing ( like for thatnksgiving, but with a little less poultry seasoning, add a little creole or cajun seasoning) and add shrimp, crab meat, and or crawfish tails to it.spray the bottom of your bake pan with pam. butterfly filets and place in bottom of pan. gently stuff with your stuffing mix. bake in 350 degree oven for approx 40 minutes (till BOTH layers are cooked through and flaky--- make sure you check the bottom layer not just the top) while that is baking, make a parmesan cream sauce (chicken broth, parmesan, garlic, cream...). plate fish, pour sauce over top. MMMmmmm....

Easiest recipe:

Pour your favorite salad dressing in a shallow plate. Drag the fillet through it, then place fish in bag of cracker crumbs, bread crumbs, cornflake crumbs, your choice, shake and place on foil lined pan and bake or cook in microwave.
