Here are just some of my SUPER EASY FUDGE Recipes:
Darn Easy Fudge
12-ounce package (2 C.) semi-sweet chocolate chips
14-ounce can sweetened condensed milk
1-1/4 C. chopped, toasted nuts
1 t. vanilla extract
Grease a foil-lined 8 inch square pan.
Conventional method~
In a double boiler, melt chips and milk. Stir until smooth. Add nuts and vanilla.
Microwave method~
Melt chips with milk on 50 percent power, 3 to 5 minutes. Stirring once while cooking. Stir in nuts and vanilla.
Pour into pan and chill until set.
Note: As much as pecans are my favorite nut, walnuts always seem to do better in fudge.

Easy Fudge
1 package of chocolate chips
1 (6 oz.) pkg. butterscotch morsels
1 can Eagle Brand milk
1 c. chopped nuts
1/2 tsp. vanilla
Melt chocolate chips, butterscotch chips and milk in a double boiler; stir occasionally until melted.
Remove from heat; add nuts and vanilla.
Garnish with nuts.
Chill 1 hour in refrigerator

Five Minute Chocolate Peanut Butter Fudge
1 bag (12 oz) chocolate chips
1 jar (12 oz) peanut butter
1 can (14 oz) sweetened, condensed milk
In a 1 1/2 qt. microwave safe bowl, melt chocolate and peanut butter on high power for 3 minutes. Stir well.
Stir in milk until well blended.
Pour into an 8x 9" pan lined with waxed paper.
Chill until firm, cut into 1" squares.

Fudge For Dummies
3/4 cup sweetened condensed milk
1 (12 oz.) semi-sweet chocolate chips
Melt chocolate chips in double boiler over hot, not boiling, heat.
Remove from heat & stir in sweetened condensed milk, stirring until well blended.
Pour into buttered 8 inch square dish.
Chill & cut when set

Quick Microwave Fudge
'This was given to me once when I received a sudden invitation to a holiday dinner party and wanted to bring something. I have used it many times and it is always a hit...You must have everything ready since this sets up fast'
3 cups semi-sweet chocolate chips
12 oz sweetened condensed milk
2 tsp pure vanilla
1.5 cups of favorite nuts
Put chips in a microwave safe mixing bowl
Pour milk over top of chips
Place bowl in microwave set at level 5 (medium)
Process for 5 minutes; turn at 2 minutes and again at 4 minutes
Remove bowl and mix
Add 2 teaspoons of pure vanilla and mix again
Add nuts and mix again
Pour into 8x8 wax paper lined pan and place in fridge to chill
Substitutions
3.5 cups of vanilla chips, or
2.5 cups of carob chips
All else remains the same

Lone Star Five-Minute Fudge
1 12 oz. bag semi-sweet chocolate chips
1 12 oz. jar peanut butter, smooth or chunky
1 14 oz. can sweetened condensed milk
In a 1 1/2 qt. bowl, melt chocolate and peanut butter in microwave on High for 3 minutes. Remove, stir well.
Add milk, stirring until well blended.
Pour mixture into an 8X8 inch pan lined with wax paper.
Refrigerate to chill. Cut into 1-in. pieces.
Makes 64 squares
Nuts are optional

Foolproof Chocolate Fudge
This is a perfect homemade gift for the kids to give their teacher, aunts and uncles or even grandparents. Let them try this one and see how easy fudge can be
3 (6 oz.) packages of chocolate bits, chips or morsels
1 (14 oz.)can any sweetened condensed milk (NOTE: Make sure it is NOT evaporated)
dash of salt
1 1/2 tsp. vanilla extract
3/4 cups chopped nuts, I use pecans, but any nut will do (optional)
In a heavy sauce pan, over low heat melt the chocolate bits with the condensed milk.
Remove from heat. Stir in the salt, vanilla and the nuts.
Now place some waxed paper into a 8 X 8 square pan. Pour the mixture into the square pan and spread evenly over the waxed paper. Chill 2 to 3 hours or until firm.
Turn the fudge onto a cutting board and cut it into squares. Can be stored loosely covered at room temperature
Makes about 1 3/4 pounds of fudge
SECRET HINT: to make it go farther use a larger pan for spreading, (maybe a 9X 11) the fudge will be in thinner squares, but will still be relished by your friends, family and company

Four Chip Fudge
3/4 cup margarine
1 can Sweetened Condensed Milk
3 Tblsp. milk
10 oz. peanut butter chips
10 oz. semi-sweet chocolate chips
11 oz. milk chocolate chips
1 cup butterscotch chips
Mix altogether in large saucepan, over medium heat, stirring with wooden spoon until melted
Add:
1 7-1/2 jar marshmallow cream
1 1/2 tsp. vanilla extract
1/2 to 1 tsp. almond extract
Mix together until blended
Fold in:
1 pound of walnuts
Pour into very lightly buttered 9x13 pan.
Let cool & cut into squares.
Hint: do not use microwave for this recipe, it doesn't work.

Chocolate Caramel Walnut Fudge
3 cups (18 oz.) semisweet chocolate pieces
1 (14-oz.) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
Dash salt
1 cup chopped Walnuts
1/2 cup caramel ice cream topping
1-1/2 teaspoons vanilla extract
In saucepan, over low heat, melt chocolate pieces with sweetened condensed milk and salt.
Remove from heat; stir in walnuts, caramel topping and vanilla.
Spread evenly into foil-lined 8- or 9-inch square pan.
Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off foil and cut into squares.
Makes about 2 pounds

Easy Creamy Chocolate Fudge
I use Merkens Milk Chocolate Wafers for this easy fudge. They can be purchased in the bulk section of the supermarket.
2 cups Merkens candy wafers
1 cup mini marshmallows
1 (14 oz.) can sweetened condensed milk
1/4 cup margarine or butter
1 cup chopped nuts (opt.)
Place all ingredients, except nuts, in a large bowl.
Microwave at Medium (50%) until chocolate is melted (3-5 Minutes), stirring once or twice during cooking.
Stir in nuts.
Pour into a well greased 8x8 pan.
Refrigerate until set
Variation: Substitute 1 cup peanut butter chips for 1 cup of the chocolate

Candy Cane Fudge
12 oz white chocolate, coarsely chopped
14 oz can sweetened condensed milk
1/4 c coarsely chopped peppermint candies
Butter 8" square baking pan; line bottom and sides with foil allowing foil to extend over sides of pan by about 1". Butter foil
Over medium-high heat in top of double-boiler or heatproof bowl set over pot of hot water combine white chocolate and condensed milk. Cook, stirring frequently, until melted and smooth, 5 minutes.
Pour mixture into pan; sprinkle candy over top. Using knife lightly swirl candy into chocolate mixture. Refrigerate until firm, about 6 hours or overnight. Cut into 1" squares, diamond shapes or rectangles.
Store in refrigerator.
Makes 64 pieces

1LB Granulated Sugar 14 oz can condensed milk 2 oz butter
1/4pint water 2tbsp milk 1 tsp pure vanilla extract.
Bring first 5 ingredients gently to a boil till sugar dissolves then cook for about 10 mins. Remove from heat ,add vanilla & then beat with electric beater for 3 mins until thick. Pour into buttered tin. when cool cut into squares!

Here is my favorite, no-cook fudge recipe, as handed down from my grandmother:
1 box of powdered (confectioner's) sugar
1 stick of butter
1 3 oz. block of cream cheese
Powdered cocoa to taste (approx. 1/4 cup, more if you like REALLY chocolate-y fudge!)
1 tsp. vanilla
Melt the butter and whip it with the cream cheese and vanilla till light and fluffy. Sift the cocoa and powdered sugar together and mix into butter/cream cheese mixture until thoroughly combined. Pour/scrape out onto waxed paper, and shape with hands into a log (it helps if you butter your hands first - otherwise, you will have a lot of fun licking fudge off of your fingers!). Wrap in waxed paper and refrigerate. Once set, slice log into desired thicknesses and serve. Refrigerate any leftovers....
You can also add chopped nuts and/or mini marshmellows once you have mixed in the powdered sugar and cocoa.
The "soft ball" stage simply means that, as you are cooking your candy mixture, you put a spoonful of it into a glass of cold water. If it forms a soft ball - similar to a piece of salt-water taffy - it is at the "soft ball" stage and you should remove your candy mixture from the heat. If it doesn't form a ball at all, it needs to cook longer. If it forms a ball that is hard and/or cracks, it is at the "hard ball" stage and you have cooked it too long....

Fudge
3 c. sugar
3/4 c. oleo
2/3 c. (5 1/3 oz. can) evaporated milk
1 12-oz. chocolate chips
1 7-oz. marshmallow creme
1 c. nuts
1 t. vanilla
Boil 5 minutes. Stir in chocolate. Add creme, nuts and vanilla. Beat. 13x9 pan. Cool. Makes 3 lbs.
