An extremely well educated atheist. But, of course, I am a Christian so why would I need to debate my beliefs with someone that believes the same as I do. A better question would have been, "Who would rather discuss religion with an educated Christian, an educated atheist, an uneducated Christian or an uneducated atheist?" But, by the wording of your question you probably don't believe that an educated Christian or an uneducated atheist exists. Hmmmmm.

Depends on if the well-educated Atheist is open to the possibility of God or if the Redneck has a relationship with God and also depends on why the RN is a drop-out.

Would you rather discuss religion with a highly educated person of Faith or a highly education person of no faith?

I'd rather have a discussion with anyone well-educated. I'm still on the lookout for a well-educated fundamentalist Christian. They're not that easy to find.

A well educated Christian, as it would probably be best to discuss religion with someone who actually knows about it.

The denomination is non-important. I'd rather discuss with someone who can question and challenge my beliefs, even critique them, as far as it is done in a rational, poignant and thought-provoking way, so I constantly keep awake my own reasoning about, inquiring into and scrutinizing of my own beliefs and tenets, thereby deepening my understanding and wisdom.

If the person is unreasonable or closed-minded, the discussion can fast become fairly uninteresting and a waste of time, regardless of his or her beliefs.

Neither...I would rather discuss spirituality with anyone who is open minded and hearted regardless of their education or religious status.
