My mom makes / sells cheese cake and she would like to stock up on cream cheese.

It should be fine for cream cheese that will be used in cheesecake.

But, don't freeze cream cheese that will be used for spreading. When thawed, it may look curdled in appearance and have a crumbly texture. However, you can freeze regular brick cream cheese for up to 2 months for use as an ingredient in recipes. Freeze in its original container.

You can freeze cheesecakes but the plain cream cheese turns out really gross. It just doesn't stay creamy and smooth. It is really hard to mix and stays in little clumps. I really wish it did but all the cream cheese I froze was yucky.

In my opinion, no. I accidentally froze some once, and tried to thaw it back out in the fridge. It got all grainy and weird.
