My favorite is F Dick, and yes kiddies that is a real name of a 150+ year old company. Unfortunately in recent years they too have gone the way of Sabatier and Henckel and are making stamped knives.... sigh. The F Dick Premier is still an excellent blade.

I have a Dexter Slicer. it is the best slicer I have ever owned and I have had many that were much more expensive. Knife quality is not dependent on price

I really like my Henckles knives - seems to be the brand that I go back to each time I add on to my collection. I know what you mean about being hard to find the forged instead of stamped though - I think it's due to the popularity of food network and such, and people not really knowing the difference...they just see a good name, and think they're getting a great knife for 40 or 50 bucks...you really have to know what you want and where to look. You have me intrigued with the F Dick series though...I will have to look into them...I always like to test new things!

My favorite is Wusthof (sorry, can't spell)...much better than Henckel for sure. I love my 10" Chef's knife and Santoku. I've only ever had to sharpen the Chef's knife once in the past 5 years.

the renowned of mine? that could be the reproduction of the Fairbairn Sykes trend 3 dagger I forged from 5160 inventory. It holds an element like none different, and is fairly ergonomic, via fact the layout facilitates. it relatively is the backup to my Ruger Redhawk loaded with .40 4 particular. no longer something beats making your guy or woman stuff... This knife will push cut back corrugated cardboard as in case you're cutting butter. i ought to probable shave with it, yet that relatively would not sound like a good option...

I love my Wusthof knives (sp?) because those are the one's that I went through culinary school with, but I also like Shun. Excellent blade, handle, and balance. Shun is so pricey, though, I'm almost afraid to take it out!

Shun is awesome, the are Japanese knives. Global is also a great knife. Check out Alton Brown.com he has a whole section on Shun.

I love my Dexter-Russells. They're just the right weight. Plus I got used to them working in a restaurant. They're good quality, and not as overpriced as some of the more popular names.

I had a restraunt owner get me some knives from Sysco food service. With a "Sani-soft" blade. They stay nice and sharp, and are inexpensive.

I have several Old Hickory knives.I guess they are getting old,they are not holding their edge as well....
