My partner's grandma died this morning. He was on business when it happened and is flying to his hometown this afternoon. Anyway, I got a text from him this morning saying that his grandma died and he is flying there today. We knew she was sick for a while, so it doesn't come as a huge surprise (i.e. she wasn't doing so well in her final days).

How do I help him cope with this over the phone, since I won't see my partner until next week after the funeral? He wasn't especially close to her--only saw her once a year--but he said his dad is going to have a hard time with the loss, so he'll have to be there for his dad.

I'm not sure what to do, since my partner is flying directly from his business trip to the funeral--there is no way for me to be there for him in person, so I just have to be there for him over the phone until he returns home next week from the funeral.

just listen. and tell him you love him and care.

Call him In the morning telling him you are there for him, and you will be available whenever he needs to call just to talk.
Also call him every night to remind him to get proper rest and say goodnight.
Another thing you could do is to have flowers sent to the funeral home and arrange to have take-out delivered to the house for the whole family.
