Since you don't like hot/warm desserts a pie just wouldn't do. If you're looking for something fairly simple and a cool/cold dessert, a jello cake is something you can make. Follow the directions on the white cake mix, once fully cooked. Start on the jello, I believe you only follow the steps 1 and 2 on the box. The hot water, and the mix. Do not add the cold water. After that, poke a bunch of holes in the cake all the way through. It doesn't matter if crumbs are all over your cake, you won't see them. Pour the jello all over the cake and stick in the freezer for around 2-3 hours. Cover with cool-whip. I have to make this for my son and husband all the time and it usually is gone the next day. OR if you want something easy, kid friendly and simple... Try making some chocolate covered pringles, it's cheap and you can fancy it up any way you would like.

Try making a pan of brownies. Bake as instructed on the box, only leave slightly soft. Mix up some instant chocolate pudding (two large boxes or 3 small) and pour on top of the brownie, evening it out level. Then put one container of whipped cream on top of that. You can decorate with chopped nuts, slivers of chocolate, small chocolate chips, etc. It's a rich dessert, but it's a huge hit when my aunt makes it for family reunions.

Take a pack of ginger biscuits. Sandwich them together with whipped cream and pour favourite tipple over (usually sherry). Keep in fridge overnight to absorb into biscuit roll. Cover roll with whipped cream and flaked almonds, or anything else you fancy. Yummy!

Melt a packet of jelly in a little boiling water ( or the micro-wave) , whip in a small can of evaporated milk then make up to a pint with water.
Whip again. Allow to set.
Use it as it is with fruit and cream or ice-cream or as the jelly part of a trifle.
Delicious.

For something quick easy and really yummy you could make cornflake cakes. Just melt some butter, chocolate and golden syrup in a pan over a low heat, then take off the heat and stir in cornflakes or rice krispies. Place in paper cake cases and leave to cool or just eat it straight from the pan...yum!
Flapjacks are also really tasty and easy to make. Here is a good recipe to make either chewy ones or crunchy ones...they are so addictive!
