Are there any exercises you can do to improve reflexes? (Exluding sports)

Yes, there are a number of things you can do for this. One is have a friend drop something like a tennis ball or a small pad and you try to hit it. He should hold the ball or pad head height just within arms length of you and you try to hit it as it is falling. Another is to do double and triple punches or jabs. At first your arm and shoulder may lock up as those slow twitch (power type) muscles take over so try to keep them relaxed. As you do this drill more often you will develop your fast twitch muscles (reaction type) your shoulder and arm will lock up less and you will after a few weeks have developed your reactions and fast twitch muscles and you should see some increases in speed and your ability to react and fire your punches. For kicks practice doing double and triple kicks.

There are also some plyometric type exercises for building speed and reaction time and also some weight training will also do this if it is light to medium weight, high repetition type workouts. Check out some of the plyometric exercises on the web and I think you will find a wealth of information and examples of some that you can incorporate in your training.

a few I know are
1) get a tennis ball and hang it from a rope from your ceiling. Try to hit , dodge and re hit the ball, and or multiple balls. Dodging things can be hard , almost impossible.
2) get an ole broom stick and at one end tie/attach a wire coat hanger then make a loop in the wire so as you have a striking hole. Now have a friend move the stick hole around giving you a target. A moving target.

hitting hands

a partner excercise:
have your partner move his hands around up down and sideways (you can include feet if you will) and try to hit them (just touch no need to punch) the more you practice the better you get and the faster your reaction speed.
