Yes you can use regular sugar as is but the texture will be a bit tougher.
You can make caster sugar by pulsing regular sugar in a food processor 3-5 times. Let the crystals settle before removing the lid because they will be fine & you don't want to get one in your eye.

Yes, it will be fine. It just takes longer to cream with the butter. Add a teaspoon of vanilla when creaming the butter and sugar, to speed up the process. You can't taste it at all.
